4T unsalted butter 4T all-purpose flour 3C milk, warm 1T finely chopped chipotle pepper in adobo sauce 16 oz grated cheese, cheddar and/or pepper jack 28 oz can Muir Glen® Organic Diced Tomatoes salt and pepper
Directions:
1. Drain Muir Glen® Organic Diced Tomatoes in colander. Shake them a few times to remove as much liquid as possible from the tomatoes. 2. In a large sauté pan over medium-low heat, add the butter and let melt. Once melted, add flour and whisk. Cook over low heat for 2-3 minutes until flour starts to turn a light tan color. 3. Slowly whisk in warm milk. Be careful not to add milk too quickly or lumps might form in your sauce. Once your milk is whisked in, add chopped chipotle pepper and let mixture thicken for 1-2 minutes. 4. Stir in grated cheese and season with a pinch of salt and pepper. 5. When cheese is thoroughly melted and sauce is thick and creamy, stir in drained Muir Glen® Organic Diced Tomatoes. 6. Serve with chips, pretzels or assorted vegetables.
