“
The child’s interests are key.”
TOYS are on the list
By Mary Koppenheffer The Biltmore Beacon
W
ord has it from the North Pole that traditional, creative, toys are on many children’s wish lists this year. Katrina Butterwick of O.P. Taylor’s toy store in Biltmore Park Town Square said the toy of the year in their stores — for both girls and boys — is the Fun Loom. The loom is a plastic grid that comes with a hook similar to a crochet hook. Working with a variety of small, colorful, rubber bands, the young artists create bracelets and other accessories in simple patterns or intricate designs. Sisters Shaina and Kayla Masterman of Biltmore Park spend hours on Rainbow Looms. Their large collection of colored bands is organized in what looks like a plastic tackle box. Twelve-year-old Shaina said she gets her inspiration for bracelets from a book of designs, the Internet and her own ideas. “What I like best is just being creative,” Shaina said. Nine-year -old Kayla agreed. To create their one-of-akind bracelets, the girls decide what colors to use, the pattern to weave and the size of the finished bracelet. Whether it is the cold weather, or simply fewer shopping days between Thanksgiving and Christmas, Butterwick O.P. Taylor said shoppers seemed to get a later start this year. But as always, the challenge is to find just the right toy for that special child. “There are always ‘best sellers,’ but the child’s interests are key,” Butterwick said. She looks forward all year to the holiday season. “We get to decorate the windows, play Christmas music and help Santa get the perfect gifts,” she said. Traditional Lego sets are popular again this year, and mini-figures are “all the rage” for stocking stuffers. “We also have a bow and arrow made by two brothers — Duncan, 10, and Hayden, 7.” Katrina said they love this product and the creators, who are from

BMX Racer Takes Home National Title By Brittany Jennings The Biltmore Beacon Christopher Grice learned how to ride a bike using the “sink-or-swim” method. At age 4, his mother took off his bicycle training wheels, sat him atop the seat and gave him a slight push down a hill. Now 10, Christopher is a national champion BMX racer. Christopher, along with his family, traveled to Tulsa, Oklahoma Nov. 28-29 to compete in the 2013 USA BMX Grand National competition. Christopher, a fifth-grader at Asheville Catholic School, competed in the 10-year-old age category and clinched first place against 40 other riders from across the nation. “I was overjoyed,” Christopher said, smiling. In a BMX race, bicycle riders sprint around a dirt track, maneuvering over hills and through turns. Christopher has raced BMX since he was 7 years old, he said. “I like getting better and doing good,” Christopher said about racing. Before the start of the United States championship race, Christopher recalls feeling nervous as he set up in the start gate. Christopher said thousands of people were about to watch him race, so he relied on his dad to calm his nerves. “I told him to not be nervous,” said his father, David Grice. “He had done the work and he had put in the time.” Prior to nationals, Christopher spent about two days a week riding his Doublecross bike at home, mostly practicing starts out of a start gate (the Grice family has a start gate and start light See BMX, 5A
Mother Daughter Tea Party Benefits Women’s Society By Mark-Ellis Bennett The Biltmore Beacon A mother daughter tea party was held at The Ramble’s Living Well Center earlier this month to benefit the Women’s Society Fund at Mission Foundation. With a total of $1,300 raised for the fund, the event was a success. Collectively, about 70 mothers and daughters were seated at beautifully decorated tables to sip tea and indulge in finger sandwiches, fruit, cheese and pastries. Afterward, the children decorated gingerbread men with frosting and a bountiful supply of candies donated by Callie Stingel from Callie’s Confections in Biltmore Park. Society member Ashley Segrave of Biltmore Forest was present with her mother and daughter. She said the Wom-
en’s Society allows its members a perfect platform to gather together for the benefit of others and to celebrate the season of giving. “Anytime I am able to spend time with my daughter is a delight. Couple that with giving back to those who need an extra hand and the feeling is just that much greater. I appreciate the opportunity to take a minute during the crazy holiday rush to give thanks and be happy,” Segrave said. ON THE TOWN Biltmore Forest Police Seek Changes for Selling Gold By Mary Ann Enloe The Biltmore Beacon
Top 10 Christmas Decorating TIPS
Donated photo
from Biltmore’s Experts 1. CHOOSE A THEME. A theme repeated throughout your holiday decorating scheme will bring continuity of style, color and overall look. Themes can be as simple as a particular color or color palette, or objects that represent memories of family events. Family photos and travel souvenirs are perfect for creating ornaments. 2. BE CHOOSEY. Use restraint and stick to your theme. You don’t have to use every ornament or decoration you own each year. 3. AVOID THE “THIS AND THAT” SYNDROME. Random placement of glittery things around the room lacks the impact you can achieve if you concentrate on three to five elements (embrace the design “rule of three”). The Christmas tree is one, a mantle might be the second, and the third might be an arrangement on top of an armoire. Within those elements you can go over the top. 4. IT DOESN’T ALL HAVE TO BE RED AND GREEN. Let your yearround style and colors inspire your holiday look. Take cues from your wall and fabric colors to make your seasonal decor unique to you and your home. 5. PACK AWAY THE EVERYDAY. Don’t be timid about sending some of your everyday decorative objects on a short vacation. Replace the mirror over the mantle with a fresh evergreen wreath. Cover your neutral sofa pillows with vivid and bright shams (or replace entirely for the season). Bring out some of your china or silver. 6. BRING THE OUTSIDE IN. Spend an afternoon outside gathering woodsy elements to create a rustic and natural look. Collect pine boughs, holly berries, pinecones, dried flowers and grasses. Add favorite ornaments for a pop of color, or purchase an inexpensive bouquet of fresh flowers, pull it apart and add your own natural materials to create a beautiful seasonal display.
EXTRA TIP! When it’s time to take down the lights, just pull gently on the cord for each section and the lights will slip right off. As you take each strand from the tree, begin at one end and pull every other light together to create neat bundle. Wrap the “tail” with no lights around the bundle and plug the outlet ends together to secure. Place these bundles in a tub of their own to prevent damaging ornaments, and to make your decorating easier next year.
7. CREATE THE BILTMORE SPARKLE. For a dazzling tree, tuck shiny ornaments deeply into the tree, starting at the trunk, and work outward. This creates depth, color and supersized shine. Hang special and more decorative ornaments close to the branch tips. Mound your favorite ornaments into bowls on your dining table, or mix them in baskets with pine cones and pods. Accent your wreaths and garlands with clusters of berries and shiny glass balls of different sizes. 8. PUNCH UP THE GLOW. Group candles in varying heights throughout your decorating scheme to generate the warmest effect. 9. CUE THE LIGHTS! Biltmore’s team has perfected a no-fuss light-stringing technique you can use on your own tree. First, work each light strand from the top of the tree down, and in sections, rather than round and round. This cuts down on ladder-climbing time. Second, work the lights in toward the trunk of the tree, and then back out to the tip of the next branch, securing the strand by slipping the tree tip between the two wires of the strand.
Biltmore Forest’s police department would like to see some laws changed when it comes to the reselling of gold. “Gold buyers can resell it seven days and one minute after they buy it, and that doesn’t give us much time to try to recover it if it’s stolen,” said Police Chief Eric Tinsley at Tuesday’s governing board meeting. Mayor George Goosmann understands the problem. After the meeting he said he would set up a meeting with the district’s representatives in the General Assembly, and with Sheriff Duncan to talk about it. Some area gold buyers work closely with police departments and conduct perfunctory background checks on sellers who don’t “match the jewelry,” as one said. “Of course, we don’t buy it if we have suspicions, but there’s no way to really tell if it’s stolen,” he continued. The issue was prompted by several recent break-ins in the Biltmore Forest area in which valuables were stolen. Biltmore Forest’s police department of 14 fulltime officers is diligent in pursuing property crimes. “We work them until we catch them,” said Tinsley at a recent meeting. The police chief cautions residents to make sure alarm systems are activated and doors are locked. Tinsley emphasizes that people need to photograph and document their possessions. “If it does disappear, insurance companies want to see that documentation, and it helps us in the recovery of stolen goods,” he said. Biltmore Forest’s police department telephone number is 2740822.
10. DO THE SQUINT TEST: To make sure the tree is evenly lit, step back, squint your eyes to make things look blurry, and look for dark or overly bright spots. Rearrange or add lights as needed.

BMX continued from 1A at their home), and two days a week at an outdoor BMX track in Weaverville. The Grice family also travels to races about once a month. Race locations span the country and include California, New England and Florida, among others. Christopher has taken first place in more than a dozen races, David said. “It takes a lot of effort. You can’t just ride a little bit,” David said. “ You’re competing against the best kids in the country. It’s just got to be your day.” At the championship race, Christopher made a clean break out of the gate — a skill he practiced until he perfected, he said. Less than one minute later, he secured the number one position in the field. “I don’t know anybody who has improved as much as [Christopher] has,” David said. “I’m so proud of the work he has put into this.” And Christopher isn’t the only Grice family member leaving a mark on the dirt track. His sister, Emily Grice, won the United States national championship title at age 10 as well. Now 14, Emily is ranked 11th in the United States in her age group. In 2012, she competed in the BMX World Championships in New Zealand. Their dad, David, has also seen his share of races. He competed on the USA cycling team. As for Christopher, he said his ultimate goal is to become a professional BMX racer. “It’s just addicting,” he said. Tea continued from 1A ently serves as the society’s service committee chair, organized the tea party. She said the party was the vision of Erin Fendler from Biltmore Forest who said, “We thought it was an idea that could recur as an annual event. Maybe it could grow into a larger space and be opened to the community so more people can learn about Mission Foundation and all the wonderful things they do.” Leigh Rhul agreed and said the Grand Bohemian ballroom would be ideal. Brenda Nash and Leigh Ruhl founded the Women’s Society last March. In October at their inaugural Founder’s Day Luncheon they announced Mission Children’s Hospital’s Child Maltreatment Evaluation Program as the recipient of their $50,000 grant. Ruhl said the society has an expectation of doubling that figure in October 2014. At a luncheon next June the society will share a report about what was accomplished with this year’s grant. The Women’s Society holds fundraising or service projects events once a month. Tentatively planned for next month is a dinner at the Rathbun House, Mission’s 36-room hospitality house for families who have a loved one being served by the health system. For more information about Mission Foundation or how to contribute to the Women’s Society Fund contact Leigh Ruhl at 828-213-1020.

Toys continued from 1A Davidson, North Carolina. The product is called ‘Two Bros Bows.’ Sarah Evers of Dancing Bear Toys on Kenilworth Avenue in Asheville shared some age appropriate suggestions. “For the youngest children, birth to age 2, Cloud b Twilight Constellation Turtle lights up and shines stars on the ceiling.” In addition to the turtle, it comes in a variety of other animals. “They are aimed at helping young children feel comfortable alone in their bedrooms.” A kid at heart, Evers has one in her own room. There is a Tranquil Bear that emits the sound of flowing water while projecting images on the ceiling — something like the old lava lamp designs.
For the 2 to 5-year-olds, Evers liked Green Toys made from recycled milk cartons that are eco-friendly and BPA free. For boys or girls, they make planes, boats and rockets, but also tea sets, cookware and a pizza parlor. She also recommended art gifts from Creativity for Kids. For children over age 5, Evers said gifts are aimed toward the special interests of the child, whether science (elementary chemistry sets), building (Legos), or art. Both O.P Taylor and Dancing Bear Toys said that stuffed animals are always a best seller and a wonderful gift at the holidays. They agreed that giving a gift that a child can snuggle and love is never out of style.
Young Biltmore Park residents Max and Ellie Dukuwicz spent some time after school recently checking out the toys at O.P. Taylor’s Toy Store in Biltmore Park Town Square. In addition to the ‘hot toys’ of the year, stuffed animals are always a popular gift according to O.P. Taylor’s Toy Store and Dancing Bear Toys. / Mary Koppenheffer photo
HEALTH-WISE
By Elizabeth Williams, MS, RD, LDN Special to The Biltmore Beacon
Eating Healthy During the Holiday Season The holiday season is a festive time loaded with parties, candies, desserts, time with loved ones, joy and happiness. With all the social events that are centered around food, you may find you are eating unhealthy or over consuming. Studies show the average individual will gain between 5 and 10 pounds during this period. Often those extra pounds can be very challenging to get off and over time, can add up to significant weight gain. There are a few things you can do to help you get through this time without doing damage to your waist line. If you find that being a social butterfly is impacting your weight management goals, stimuli narrowing may help. Stimuli narrowing is a concept in which one limits their exposure to stimuli. In this case, it would mean limiting exposure
to situations that could lead to over eating. An example would be to limit the number of holiday events you attend, especially the ones that are solely food focused. If you are involved in the planning, plan more activity focused parties and have healthy food options for guests. Plan ahead. When you are in a situation where you are exposed to trigger foods, make a plan before you go. This plan may include practicing portion control. Plan to have a small portion of the foods that you normally would not eat every day. You may also choose to eat a small snack before you go. This strategy can help you choose better and eat smaller portions. Whatever the plan, it is important to think about it before you are in the situation.
Stay Active. It’s important to continue your exercise plan during this busy time. Being consistent with exercise can help to avoid weight gain with increased food intake. Also, exercise has been shown to help reduce emotional eating. And lastly, do not fear mistakes. During this time, you may choose to eat foods you don’t normally eat that could result in a weight gain. What should you do if this happens? Take action!! You want to reverse the small weight gain before it becomes a gain that seems psychologically more difficult to reverse. Just remember, any gain is reversible if you go back to a food and activity plan that worked for you in the past. Elizabeth Williams is a registered dietitian at Mission Health.

A Holiday Gift Guide
STRESS FREE shopping
By Tim Bullard The Biltmore Beacon
GIVE THE GIFT OF EXPERIENCE Create special holiday memories by giving a unique gift, such as a hot air balloon ride.
T
By Shelby Harrell | The Biltmore Beacon
he clock is counting down until Christmas, and shoppers are bustling around stores all over trying find that perfect present for someone special. But many holiday shoppers may dread choosing gifts for everyone on their list, and fortunately there are ways to choose an ideal holiday gift without having to empty one’s piggy bank.
It all comes down to being a little creative, and putting a little extra thought into it. And extra thought doesn’t necessarily mean waiting for hours outside in the freezing cold for a store to open for Black Friday deals. One idea is to shop for gifts online. Based on a person’s interest or favorite store, an online website can have dozens of affordable options for gifts, and may even offer free or reduced shipping. There’s also the idea of an online gift registry, such as MyRegistry.com. An online registry lets members create their own wish lists of items from just about any website and allows them to their lists via e-cards, Facebook, Twitter and Pinterest. Gift Cards may always seem like a good idea, but it’s always a possibility that the gift cards may not be used. According to the National Retail Federation, an estimated $2 billion in such cards went unredeemed last year.
FINANCIAL FOCUS
Be Aware of Risks of Not Investing
You’ve no doubt heard about the risks associated with investing. This investment carries this type of risk, while that investment carries another one. And it is certainly true that all investments do involve some form of risk. But what about not investing? Isn’t there some risk associated with that, too? In fact, by staying on the investment sidelines, or at least by avoiding longterm, growth-oriented investments, you may incur several risks. Here are some to consider: • You might not keep up with inflation. If you put all your money under the proverbial “mattress,” or, more realistically, you keep it all in “cash” instruments and very short-term investments, you might think you are “playing it safe.” After all, you might reason, your principal is protected, so even if you don’t really make any money, you’re not losing it, either. But that’s not strictly true, because if your money is in investment vehicles that don’t even keep up with inflation, you can lose ground. In fact, even at a relatively mild three per-

Not all presents come wrapped. You can also give the gift of discovery — and help those you love discover the towns they love. Whether you purchase concert tickets, cooking classes, or go so far as to provide balloon or helicopter rides — the gift of experience is something much more memorable than a silk tie. Some people truly have it all, so instead of giving such friends and family one more thing they don’t need, why not support a cause in their honor? You can choose an organization that’s meaningful to you or them. Many of them have special contribution options for gifts. Ultimately, it’s always a good idea to get help. If brainstorming alone just doesn’t cute it, find an appropriate person to help — whether it’s a boyfriend/girlfriend, a boss or a best friend. No matter what approach you take, with the right strategies, shopping for anyone can be a stress-free experience.
cent annual inflation rate, your purchasing power will decline by about half in just 25 years. • You might outlive your money. For a 65-year-old couple, there’s a 50 percent chance that one spouse will live past age 90, according to the Society of Actuaries. This statistic suggests that you may need your investments to help provide enough income to sustain you for two, or even three, decades in retirement. • You might not be able to maintain your financial independence. Even if you don’t totally run out of money, you could end up scrimping by — or, even worse, you could become somewhat dependent on your grown children for financial assistance. For most people, this prospect is unacceptable. Consequently, you’ll want to make appropriate financial decisions to help maintain your financial independence. • You might not be able to retire on your terms. You would probably like to decide when you retire and how you’ll retire — that is, what sort of lifestyle you’ll pursue during retirement. But
both these choices may be taken out of your hands if you haven’t invested enough to retire on your own terms. • You might not be able to leave the type of legacy you desire. Like most people, you would probably like to be able to leave something behind to your family and to those charitable organizations you support. You can help create this type of legacy through the appropriate legal vehicles — i.e., a will, a living trust and so on — but you’ll still need to fund these mechanisms somehow. And that means you’ll need to draw on all your financial assets, including your investments. Work with your financial advisor to determine the mixture of growth and income investments you need during your working years and as you move toward retirement to help you meet your retirement goals. However you do it, get into the habit of investing, and never lose it — because the risks of not investing are just too great. This article was submitted by Edward Jones.
Christmas music was heard earlier than ever this year, and with WalMart starting Black Friday early, it’s time or even almost too late to think about your holiday gift guide. If you really want to treat yourself, go out and get the new Bob Dylan catalog. If you want to surprise your teen son, get him Polo Red by Ralph Lauren. It is a fiery blend of spicy red saffron, fresh red grapefruit and deep redwood “that ignites the thrill seeker in every man.” There are plenty of new books on the shelves this time of year as Santa tiptoes to your tree, like After Her by Joyce Maynard, based on a true serial killer case. Stephen King’s sequel to “The Shining” is great, very scary. Tim Bullard is a freelance writer in the North Carolina region.

Honey Glazed Ham with Fruit and Walnut Compote
Courtesy of Chef Paul Klaassen of Biltmore’s Bistro
HONEY GLAZED HAM INGREDIENTS 5 lb. ready-to-eat ham 1⁄4 cup whole cloves 1⁄4 cup dark corn syrup 2 cups honey 2⁄3 cup butter METHOD Preheat oven to 325ºF. Score ham and stud with the whole cloves. Place in foil lined pan. In the top half of a double boiler, make glaze by heating the corn syrup, honey, and butter. Keep glaze warm while baking ham. Brush glaze over ham, and bake for 1 hour 15 minutes in preheated oven. Baste ham every 10–15 minutes with the honey glaze. During the final 4–5 minutes, turn on broiler to caramelize the glaze. Remove from oven, and let sit a few minutes before serving. Serves 10–15.
FRUIT AND WALNUT COMPOTE INGREDIENTS: 2 ounces pineapple juice 2 cups fresh squeezed orange juice 1 teaspoon cinnamon 1 teaspoon ginger 1 teaspoon cloves 1⁄2 cup currants 1 cup golden raisins 18 black mission figs 7 “golden” Turkish figs 24 Turkish apricots 1 teaspoon orange zest 1 cup walnuts
85057
METHOD Place juices in a small saucepan and add cinnamon, ginger, and cloves. Turn on low heat, adding currants, raisins, figs, apricots, and orange zest. Increase heat and bring mixture almost to a boil. Then lower heat, and simmer gently 10–15 minutes until juice thickens and is reduced. Turn off heat; let sit to room temperature and then gently stir in walnuts. Store compote covered overnight in refrigerator—the fruit will continue to absorb the spiced juice, getting thicker until no juice remains. May be served on ham or on the side. Serves 10–15.
Winemaker’s Suggested Pairing: Antler Hill Cabernet Sauvignon

Hilderbran receives perfect score on ACT exam

aggie Hilderbran, 15, daughter of Greg and Carole Hilderbran and a junior at Carolina Day School, earned a top composite score of 36 on a recent ACT test. Nationally, while the actual number of students earning a composite score of 36 varies from year to year, on average, less than one-tenth of o1 percent of students who take the ACT earns the top score. Among test takers in the high school graduating class of 2013, only 1,162 of 1.8 million students earned a composite score of 36. “We have such strong academics at Carolina Day School, and students are exposed to so many different educational experiences,” said Hilderbran. “When taking the ACT test, it really helped to have background in and understanding of many topics.” She also credits the school’s well-rounded student experience as part of her academic success. “Playing soccer, tennis, and being a part of the swim team require me to prioritize my time. them, you are aware of how much you have to get done. I think that’s key when you’re constantly challenging yourself academically and outside of the classroom,” Hilderbran said. The ACT consists of tests in English, mathematics, reading and science. Each test is scored on a scale of 1-36, and a student’s composite score is the average of the four test scores. Some students also take ACT’s optional Writing Test, but the score for that test is reported separately and is not included within the ACT composite score. “Maggie is obviously an incredibly bright student. She is highly motivated, loves learning for the sake of learning, and always gets the most out of every opportunity to deepen her understanding of any topic. While she might not admit it to everyone, Maggie enjoys taking tests,” said Lincoln Gray, Assistant Principal/Dean of Students at Carolina Day School and Maggie’s advisor. “She enjoys challenging herself to do the best that she can do. It is also very important to note, Maggie See Hilderbran, 7B

ON THE TOWN Hilderbran continued from 6B has a wide range of interests and activities. She is deeply involved with her church, she is a varsity athlete, and she really enjoys spending time with her friends and family. She is an awesome young lady. I am so proud to serve as Maggie’s advisor.” In a letter recognizing this exceptional achievement, ACT CEO Jon Whitmore said, “While test scores are just one of the many criteria that most colleges consider when making admission de-
cisions, your exceptional ACT composite score should prove helpful as you pursue your education and career goals.” “I am part of a family that values academics,” Maggie continued. “I am very lucky that my parents support my education.” ACT test scores are accepted by all major U.S. colleges, and exceptional scores of 36 provide colleges with evidence of student readiness for the academic rigors that lie ahead.
