Introduction In a global market, the food industry is developing products aimed to be sold in many countries. To gain new markets, products should be adapted to the liking and behavior of local consumers. However, organizing sensory or consumer tests in fast developing markets can be expensive and complex. Using the Internet for studies in remote countries seems a promising solution. The objective of the present study is to explore the experimental conditions in which remote sensory tests could be conducted through the Internet regarding : - instruction language: native language vs. English - instruction complexity: lower complexity (triangle test ) vs. higher complexity (A – not A with reminder) - product preparation: no preparation (water) vs. complex preparation (instant coffee) - countries: France, Italy, Madagascar and Vietnam
