Abstract
In this study, Gemlik olives grown in Osmaniye were stored under CO2, N2 and atmospheric conditions (control) for 25 days. The total flavonoid content and antioxidant activities (DPPH scavenging activity, reducing power and FRAP (Ferric Reducing Antioxidant Power)) of oils obtained from olives were determined.
