ABSTRACT Processing of agricultural products requires a good handling for its quality can be maintained. One of the crops that are vulnerable to physiological damage is chili. The purpose of making chili dryers used AVR microcontroller ATMEGA 8535 to easier the process of drying red peppers with a relatively quick time and space that is not too large but with a capacity of red pepper sufficiently. The tool is will show the water content of red peppers and temperature during the drying process. The design of this system used design and construction method consists of several steps, (1) Requirements Identify, (2) Requirements Analysis, (3) The concept of Design, (4) Production, (5) Tests Equipment, and (6) Analytical study. The system is consists of hardware and software. The hardware consists of: circuit power supply as power voltage 5 VDC and 12 VDC for system to voltage DC motor, SHT11 sensor module circuit as a temperature detection (in bytes 0x03) and the humidity detector (in bytes 0x05) red peppers, Minimum of System AVR ATMEGA 8535 as circuit controller inputs, outputs and circuit use the LCD display, relay driver circuit, and buzzer as a voice indicator when it is dry chili in humidity until 10%. The software used C programming language. Viewed from the test results, it can control the system at the time to complete the drying process in a prototype room and display it on LCD. The quality is influenced by the drying peppers. The tool is also able to drying chili peppers from the humidity that the water levels reached 10% with a relatively quick time. This tool is controlled by a heater as a heater and fan as the temperature grading so that the process of drying red peppers can be run well by achieving success by 90%.
