Helen Friedman’s Easy Cupcake Recipes One Bowl Chocolate Cupcakes This recipe makes wonderful cupcakes but is versatile enough to make layer cakes and sheet cakes, too. 2 1/2 cups all-purpose flour 1 1/4 cups Dutch-process cocoa powder 2 1/2 cups sugar 2 1/2 teaspoons baking soda 1 1/4 teaspoons baking powder 1 1/4 teaspoon salt 2 large eggs, plus 1 large egg yolk 1 1/4 cups milk 1/2 cup plus 2 Tablespoons vegetable oil 1 1/4 teaspoon vanilla extract 1 1/4 cups warm water Preheat oven to 350 degrees. Line 24 mini-muffin pans with paper liners. Sift together flour, cocoa, sugar, baking soda, baking powder and salt. In bowl, mix eggs, milk, oil, vanilla and warm water Divide batter among 24 mini muffin cups filling 2/3 full. Bake around 20-25 min Cool and frost with favorite icing.
