who contribute to the production of OUR HOMES magazine. We have an amazing team of writers, photographers, art directors, production managers and sales reps. Together we create a quarterly magazine with one focus: to Celebrate Life At Home. Our team hasn’t changed much over the years. Bonnie Fox has always photographed our Style Picks, People and Comfort Zone. Sandy MacKay has been behind the lense for every home-interior shoot. Our freelance writers, Andrew Philips, Kathleen Duncan and Carolyn Black craft the wonderful stories behind each home we feature. As OUR HOMES begins our ninth year in print I want to acknowledge their work and thank them for bringing this magazine to life issue after issue. Their work, however, is just the beginning. Once the photos are taken and the stories written, other members of our team take over. Art Director Tara Chattell and her creative associates design the pages. Our editors fact-check and proof the pages before the editorial portion is sent to production. Our production department, led by Lynn Derrick, takes care of our advertising partners, creating their ads and placing them amongst the pages. I want to welcome Production Manager Tracy Shuttleworth to our Barrie Orillia Midland Innisfil team. Tracy is a very talented graphic designer who is working directly with our clients. On a final note I also want to acknowledge and thank our sales team, led by Publisher Jamie Jefferson. Kim Smith and Glenda Wiedeman help our clients reach out to you, our incredible OUR HOMES readers. This magazine will always focus on Celebrating Life At Home. That’s what we do. We take you inside beautiful homes in this region and showcase people, products and services that can help make your home everything you want it to be. After all, our homes are where we nurture our families, relax with friends, unwind, and enjoy our privacy.

KIDS’ BEDROOMS STORY STEPHANIE REDMOND
Designer Stephanie Redmond shares her ideas.
Timeless Design & Modern Style
Kids’ bedrooms can be a challenge. The characters, favourite colours and toys can all create a bit of a circus effect. Kids like bold, they like pattern, and they don’t always see what matches with the same level of maturity as you do. Not to mention, you’re trying to please what will likely be your toughest client!
5
7
6 A bedroom or playroom does not have to be decorated with the same level of sophistication as the rest of your home, but it should certainly flow. Show a bit of restraint so the space doesn’t look too wild. After all, we are trying to create a restful space (for the bedroom anyhow), not a party zone.
switches. You can ask kids to clean up, but you have to have a system in place to allow them to do it.
Kids are busy! Their needs are more than just a bed and a dresser. They require a space to sit and play, a place to read, and storage for stuffies and toys. It should be soft and inviting but also stain resistant and easily maintained. I don’t believe they always intend on making a mess, but they certainly have a knack for it. So instead of choosing perishable fabrics, make sure everything is washable so it lasts.
Remember that younger kids are short! They can’t reach anything set at adult height and it causes frustration. Set hooks low so they can easily hang up a sweater or backpack and make sure there is a stool on hand for high light

FALL 2015
If you let your child choose a paint colour, I guarantee they will choose something bold. Instead of fighting a losing battle, use their choice as an accent colour on one wall or on a piece of furniture. Don’t overdo it. The same applies for wall coverings. A whole bedroom in pattern can be busy and leaves no space for trophy shelves or artwork.
Lighting Lighting is always important and you should have at least two options: One to light the space when it’s playtime and one to read by in bed. If you have a desk in the room, don’t forget a small desk lamp. Children like to be masters of their domains, so give them the right tools for a little independence.

3
It’s easy to get caught up in the here and now with a child’s room, especially with the younger set. But beware of the age trap. In one or two years, they will outgrow it. Think ahead! OH

MASTER THE
Company’s Coming...
When shopping for green lunch products, look for the following:
LITTER-LESS LUNCH
5 Fun & Friendly Packaging Options
Free of toxins,
such as PVC, lead, BPA and Phthalates. These are not things you want your or your child’s food coming into contact with.
I
ST O RY SHELBY HI LSO N

the more likely you’ll be to use it.
which means it’s also back to the dreaded chore of packing lunches. Aside from adhering to food restrictions, choosing food your kids will actually eat and finding the time to prepare each night (or early morning), lunches have been made even more challenging with many schools’ “no-waste” policies. Though a challenge, it’s a healthy initiative for all involved, especially this beautiful planet we live on. According to wastefreelunches.org, an average school-age child using a disposable lunch generates 67 pounds of waste per school year. That equates to 18,760 pounds of lunch waste for just one average-size elementary school. We have an opportunity to not only make our packed lunches more eco-friendly, but also more fun.
High quality.
If you’re going to invest in reusable lunchware, then make sure it’s not something you’ll be tossing a month from now. Natural materials like glass, stainless steel and bamboo are usually good bets.
Here are some fantastic North American products to incorporate into your lunch-packing routine:
1
Invest in a few reusable Colibri snack and sandwich bags. These colourful, printed bags feature a water resistant nylon liner, are BPA-free and FDA approved as food safe. Zippers are lead and nickel free too. Simply wipe the bags out or throw them in the wash. Get the kids involved and try their new “colour your own” line.
2
Along the same lines, in place of plastic wrap, try Abeego all natural beeswax food wrap. Combined with hemp, organic cotton, jojoba oil and tree resin, the beeswax wraps keep food fresh longer and can be used with everything from sandwiches and veggies to meat and cheese.
3
Finally make good use of those old mason jars with a Cuppow lid. BPA and phthalate free, their BNTO Lunchbox Adapters are a genius and affordable way to pack veggies and dip, salad and sauce, fruit and yogurt, or a number of other combinations in a single mason jar.
Cuppow
4
There are tons of great, ecofriendly lunch boxes available, but research shows that kids often eat more of their lunch when they have visible options. Plus, it’s way easier to wash one container than several different dishes and lids. Check out PlanetBox, a stainlesssteel option with several compartments and a customizable lid. The Goodbyn Hero is another great design with three main compartments and two separate “dippers.” They are dishwasher safe, BPA and phthalate-free, and 100 per cent recyclable.
5
Lastly, for yummy soups, stews, pastas or hot drinks, U•Konserve offers great stainless steel, leakproof, insulated food jars, which keep food hot or cold for hours. They’re BPA, PVC, phthalate, and lead-free, and come in 12 or 16 oz sizes. OH

Blending contemporary style with traditional touches, and fitting both seamlessly into a beautiful dwelling perched on the edge of a rocky bay was a challenge Debbie and Don Ford handled easily. Both seasoned home renovators and builders, they worked with Bert Bongers of CedarCoast Timber Homes to create a thoroughly modern timber-frame home. “CedarCoast was a pleasure to work with, very accessible and the timbers are top quality,” says Debbie.
TOP LEFT: Debbie and Don lived on their boat during the construction of their new home until the snow forced them to retreat to the boathouse. FAR LEFT: Large custom windows frame the incredible view of the lake. LEFT: The couple’s son Ken Ford built the home’s glass-and-iron railings. ABOVE: An open floor plan and selective furnishings help create a stylish balance in this modern-rustic retreat.
With exterior stain Mystic Black by Trans Canada Wood Products Ltd., granite skirting by Muskoka Rock and imitation slate by Watt Roofing, the home nestles unobtrusively into the waterscape. Beautiful flat stones, salvaged from the blasting done for the foundation, make up the exterior patio and stairs off the kitchen. Debbie and Don, avid boaters originally from Montreal, say the spot on a lake just outside of Coldwater is ideal because their adult children live near Toronto, making it only about an hour’s drive to visit. Debbie adds they’re lucky because “it’s hard to find
waterfront and not have to drive miles and miles and miles.” They purchased the property and tore down an existing house, starting their own build about a-year-and-a-half ago. They received an unexpected offer on their home near the city and ended up living on their boat for six months during the build. When it started snowing, they moved into the boathouse. Determined to host Christmas for extended family, they moved in on December 23. That afternoon, guests started to arrive, the tree was trimmed and they celebrated their Continued on page 32

feature first holiday in the new residence. “We had 20 people here for a week, it was a good way to christen the house,” Debbie says. The wood-burning Belgian Stûv fireplace, faced with honed Eramosa limestone from Maxwell Stone, was the last thing to be constructed. With firewood tucked beneath the hearth, the limestone face soars to meet the ceiling timbers in the two-storey great room. Debbie says lighting the great room was a challenge until they came up with the idea to install LED strips along the timbers. “It’s beautiful at night, a nice warm glow, ” she says. The west-facing balcony off their bedroom
guarantees many spectacular sunsets. Debbie says, “I love my bedroom. It’s quiet and not cluttered and I love waking up and looking out the window and seeing the lake.” The same sunsets sometimes dazzle diners around the kitchen table, a problem solved by lowering discreet fabric blinds by Cindy Blair of Blair Interiors & Window Fashions. The sleek live-edge dining table is made from walnut by James Peglar of Plank to Table Design in Barrie. The windows throughout were hard to source. “We didn’t want white vinyl and we didn’t want wood and we really liked a clean

black line against the timbers. We had to find windows we wanted that passed the Canadian rating and it wasn’t easy.” Denis Zigante’s Just Aluminum took on the challenge of installing the windows with a high enough rating for Canadian winters. Debbie’s millwright son Ken Ford constructed the home’s sleek glass and iron railings; his company, KLF Millwright, is based in King City. She says, “He does beautiful work and we’re very proud of him.” Porcelain tile over radiant heat ensures a cosy feel in the lower family room and guest bedroom. Lots of storage in the laundry room provides space for snowmobile gear during snow season. The family room opens to the waterfront and the guest bath is a short distance from the door to ensure a swimmer’s sandy feet are quickly cleaned. The main floor powder room’s vanity is a nod to tradition and also to the couple’s Montreal roots – they picked it up from an antique shop near Château Montebello before the house was even built. The trim and doors, from the West End Series, are from Barrie Trim and Mouldings. The doors boast a spare, clean pattern that unifies the modern look throughout. The trim and doors are painted Dove White by Benjamin Moore and the walls are Revere Pewter, a popular grey. Continued on page 34

The centrepiece of the home is definitely the kitchen. Debbie loves to cook, especially with her daughter Ashley, who shares her mother’s passion for food. Debbie says Ashley is a wonderful cook and she cherishes their time together in the kitchen, often cooking together for their large extended family. While Debbie and Don made all decisions regarding materials, colours, room flow and design, Debbie says, “When it came to the kitchen I needed an expert.” She contacted Lindsay Schultz of Lindsay Schultz Kitchens & Cabinetry Ltd. and says, “As soon as I talked with Lindsay I knew it was going to be a perfect fit.” Lindsay agrees: “Yes, I knew right away that we were going to be a great team. We fed off each other’s enthusiasm and design ideas.” Lindsay adds that, after 10 years in the business, she has found an efficient way to ask questions that quickly gets to the heart of a client’s needs and wishes. “I like sharing thoughts and ideas with them to get their reactions, which also helps me understand how much I can push the envelope with design.” Continued on page 38
Debbie loves to cook with daughter Ashley in her kitchen, designed and installed by Lindsay Schultz Custom Kitchens & Cabinetry Ltd. The dove white upper cabinets balance the walnut lowers with a driftwood glaze. The stainless steel wraparound range hood is stunning and sets off the escarpment marble backsplash.

feature Debbie described her vision for the Fords’ home – cottage style mixed with modern elements – which is one of Lindsay’s favourite combinations. Lindsay says, “I wanted a transitional feel, something that pushed modern design but cautiously, as the kitchen was sitting surrounded by knotted wood floors and fir beams. This is where the driftwood walnut-base cabinets and island came into play. They played beautifully off of the modern door style we chose and clean, warm-white upper cabinets. The modern-style stainless range hood was a simple, sleek way to push the modern back into the mix. The backsplash speaks for itself – rough-cut stone to give the whole kitchen a nod to nature.” This Christmas, the family will gather again in the kitchen and the season promises to be a bit less hectic and even more joyous. The Fords recently received news that a new grandchild will arrive on December 25. OH

As denizens of a land of extreme weather, most Canadians believe they can endure and survive whatever storms, rain or wind nature blasts our way.
Have an emergency preparedness kit with all supplies
W
“We typically, all of us, cross our fingers and hope nothing happens,” says Brent MacDonald. But things don’t usually work out that way. That’s why restoration experts like MacDonald have been getting more and more work. The owner-operator of Paul Davis Restoration Specialists, he says Canadians are ill-prepared for the challenging weather conditions seen in recent years. Rainfalls have been heavier, snowstorms more severe and flooding more prevalent. Events like micro-bursts, polar vortex and ocean blob are all part of a new and growing lexicon that defines climate change. When record rains in Toronto flooded houses with storm water and sewer systems backed up into basements in 2013, insurance companies paid almost $1 billion to clean up the mess. That same year, thousands of Calgary residents fled their homes when floodwater washed over the city causing damage in excess of $1.74 billion. Despite warnings from Environment Canada that more severe weather is on the way, a spring 2015 survey by RBC Insurance found many Canadians aren’t taking precautionary measures to prevent water damage to their homes. In fact, fewer Canadians are taking steps to prevent water damage, according to the survey. “It’s alarming to see such a steep decline in Canadians’ willingness to take precautionary measures to protect their homes,” says Paula Bandi, senior product manager with RBC Insurance, in announcing the poll results. “Extreme weather events are inevitable and Canadians need to take proactive steps to protect their home from extensive property damages.” MacDonald says homeowners should prepare a game plan for dealing with severe weather. “We are the guys who come in once the damage has happened, but we also help identify potential problem areas,” says MacDonald. “From seeing so many things fail, we have a database of information that can help a homeowner with a tough situation or concern. We can support them in coming up with a solution,” he says. “If a homeowner does have questions – we are available to do a consultation.” 40 | ourhomes

required to survive 72 hours without help or electricity, including water, food and medications. Prepare and rehearse an emergency evacuation plan and ensure your family knows what the plan is.
To begin an extreme weather plan, MacDonald suggests taking a walk around the home to assess where water travels. Water is the most frequent cause of damage due to severe weather. “Redirecting downspouts with extensions away from the footings of the property would be the least expensive thing to add to your arsenal,” he says. Check the roof for any missing or lifted shingles. When re-roofing a home, consider using a good ice-and-water shield product under the shingles. Larger eavestroughs to control the volume of water also help. Rain barrels are not only effective at controlling the volume of water around the footings of a house, they also provide water for gardening and irrigation. “That’s something I’ve seen more and more.” Identify and secure anything that might blow away. “A flag mounted to the end of your fascia could rip something off,” MacDonald says. The wind often blows chairs off docks. Chairs can be weighed down by simply placing something heavy, like a couple of rocks, in the chair. Precautionary measures, such as installing protective plywood across prevailing wind areas, can protect sliding glass doors. An unsecured backyard trampoline can sail off like a kite in a strong wind. In areas with heavy snowfalls, homeowners can avoid heavy snow loads on their roof and ice damming that forces water under shingles by shovelling snow off the roof once or twice every winter. “It’s just taking a risk away,” MacDonald says. Before winter arrives, shut off exterior hose bibs to prevent them from freezing and bursting. Consider installing a freeze-proof faucet. When looking around the property remember to look up at the trees. Are they healthy? Will they drop heavy limbs or branches in a storm? An arborist can determine what maintenance or pruning is needed. To avoid sewer backups in urban areas, a backflow protector will prevent sewer water from flowing back into the house. “After Toronto’s storms a few years ago, there was a big push on homeowners putting them in. That was simply to reduce the amount of claims as the result of sewer backups,” MacDonald says. OH

Searching for a little more drama in your décor? The powder room is the ultimate place to play with bold looks you would never dare apply in the rest of your home – you can enjoy it a little bit every day, without feeling overwhelmed by overexposure. Here are eight of my favourite ideas for getting a big look in this small space, and satisfy your craving for design excitement. Playful Pendants In a primary washroom, balanced lighting is especially important. In a powder room, however, consider choosing a pendant light that casts beautiful shadows across the room. One small hanging fixture will feel like a grand chandelier here, and the ambience it creates will be a magical moment for guests.

Powerful Patterns Wallpaper is back in a big way, and the powder room is a great space to switch-up from paint. In a typical small bath, a large amount of wall surface is taken up by the door, the mirror, a window and the white fixtures, all of which break up even the boldest print – so you’re free to run with your wildest passions. Try nature-inspired materials here, such as quartzite and exotic patterns like floral or tropical birds to give the bathroom a sense of warmth and luxury. Continued on page 44 42 | ourhomes

Deliciously Dark
Marble counters may seem too high maintenance (or too budget-busting) for a larger space such as the kitchen, but in a powder room, it only takes a small slab to create a vanity top, which will likely see gentle use. Indulge your taste for marble here, and you can enjoy it every day without the worry.
Love the sophistication of a deep, dark colour, but worry about feeling like you live in a cave? A powder room is the perfect place to take a walk on the dark side without getting tired of it – plus, it’s a small space to repaint later when tastes change, so there’s no need to worry about playing it safe.

TIP: Ask a stone supplier what they have available in off-cuts, and you may be able to find a suitable (and beautiful) mini-slab for a bargain price.
Solid Stone Floor-to-ceiling stone is the ultimate luxe look for a bathroom, and in a powder room this can be achieved on a reasonable budget, as the walls are typically smaller. Splurge on a favourite tile, and break up the effect with a large inset mirror panel.
Add drama underfoot

Disappearing Mirror

Have a beautiful wall treatment to show off? Skip the mirror over the vanity, for a rulebusting look that will surprise guests. You can always add a mirror to the back of the door if you don’t quite feel bold enough to go without one completely.
Colour Overhead Powder rooms tend to be tall compared to their narrow width, so a painted ceiling helps visually lower the room to create both drama and balance. Try Benjamin Moore’s 2062-60 Blue Hydrangea and feel like you have a brand new skylight overhead. Blue hues especially will make white surfaces look even whiter for a fresh, clean atmosphere. Drama doesn’t have to come from the walls or even the ceiling! Pure coconut water is the clear liquid found inside young, green coconuts. It’s delicious on its own and has a wide range of uses in recipes. As a refreshing drink, it tastes nuttysweet with a hint of toasted coconut. With 730 mg potassium, 32 mg calcium and 18 mg magnesium, it’s a very good substitute for water in recipes. I use it in stir-fry dishes and to cook rice for savoury or dessert dishes. Look for pure, plain coconut water (the ingredient on the label should read: coconut water) and avoid brands with added juice or sugar or flavourings, which make them virtually the same as soda or other sugary beverages.

FALL 2015
Just imagine strolling down a quiet street with homes lit by gas-fired lanterns, where life feels like a step back into a more idyllic time. Welcome to Braestone, a new development in Oro-Medonte near Horseshoe Valley. Braestone is a genuinely distinctive, 229home country estate development that sits on 570 pristine acres with 60 per cent dedicated to preserving the region’s abundant natural beauty. “This is a truly unique project,” explains Bryan Nykoliation, vice president of marketing and real estate for Barrie-based Georgian International, Braestone’s parent company. “Authentic and phenomenal pastimes are built into the community to offer a very special experience for homeowners. “We like to think of this as Ralph Lauren-meets-Norman Rockwell,” Nykoliation says. “It’s a step back to simplicity. It’s refined country living.” Named after the Scottish word for hillside and as a salute to the abundant fieldstone found on the property, the Braestone community features a wide range of activities and special attributes aptly called “The Remarkables.” One such example is Starfall, a natural observatory located on the site’s highest point, making it the perfect place to enjoy those captivating starry nights. “We needed to incorporate something captivating,” Nykoliation explains. “Our Remarkables, even the architecture, are unique to the vision of Braestone.” Continued on page 54
Enjoy refined country living at Braestone, a master planned community in Oro-Medonte. Braestone’s name is inspired by the Scottish ancestry of many of the pioneers who settled in Oro-Medonte. Even the sales office is an architectural delight, influenced by the farmhouses and barns of the region. The development’s working farm is already producing berries.

home & builder Located next to a working farm, the development’s 20 current Remarkables range from the aforementioned Starfall to a Christmas tree farm, toboggan hill, skating pond, walking and horseback-riding trails, along with a sugar shack, a pumpkin patch and even an apiary. There will even be a “Field of Dreams” baseball diamond surrounded by a field of corn, a tribute to the W. P. Kinsella classic Shoeless Joe. But once one gets past the Remarkables and what they entail, it’s easy to fall in love with the striking home designs created by Oakville architect Bill Hicks. Majestically sitting on half- to full-acre lots, Braestone brings a modern interpretation of “upcountry-style” influenced by the farmhouses, sheds and barns of the Oro-Medonte region. Bungalow and two-storey floor plans have been designed using a “continuation” architecture approach.
These pages show a model from The Morgan Family. This is a three bedroom, 2,658 square foot bungalow with a loft. The finishings are exquisite and the look sophisticated. All exterior and interior paint palettes are inspired by Ralph Lauren.
Construction starts this fall with the first group able to move in next spring. Once completed, the erstwhile development will feature 229 homesteads with Phase One totalling 59 residences. Homes range in price from $450,000 to over $800,000, a figure that includes lot premiums if applicable, and finished coach house or basement options with the average selling price landing in the $680,000 to $700,000 range. “We have six different styles of homes with varying types of floor plans and elevations to meet different buyer needs,” Nykoliation says, noting about half of phase-one lots have already been sold. “The roof lines have the same pitch whether it’s a bungalow or a two-storey home, so the scale of each home is complementary to one another despite their varying sizes.” Continued on page 56 54 | ourhomes

Buyers choose their favourite house design and then select from a pre-approved colour palette to pick their exterior colour schemes. Named after horse breeds with monikers like Belgian, Morgan and Clydesdale, the six home-design footprints adhere to strict architectural guidelines for exteriors to ensure a consistent look with a high level of quality. All totalled, buyers can choose between 18 different floorplans, ranging from a two-bedroom bungalow totalling 1,120 square feet to a four-bedroom, two-storey model featuring 3,235 square feet. “We also offer detached and attached garage designs,” Nykoliation says, pointing out the coach-house building’s upper level could serve a variety of uses, from an artist’s studio, carpentry workshop or guest bedroom. “Our features and finishes are a notch above,” Nykoliation says, noting that Braestone has benefitted from a strong working relationship with the regional design team of Redman Watson. All homes come standard with steep roof pitches, cupolas, granite countertops in the spacious, very workable kitchens, full mudrooms, warm engineered-wood floors throughout the well-appointed living areas, huge windows to provide lots of natural light and expansive front porches perfect for entertaining or reading the latest novel. And with so many different floor designs, there’s the potential for many variations on the size and number of bedrooms and bathrooms. As well, should more space be required in the future, each home features huge basements ready to be finished. There are also architectural controls and guidelines regarding colour choices, fence styles and what’s permitted within the development. “Our buyers really appreciate the stricter controls and guidelines we have in place,” Nykoliation says. “It ensures a certain quality and standard for the community. ” Continued on page 58 56 | ourhomes

While the homes are freehold, buyers will pay a monthly $75 “condo” fee designed to help fund some of the Remarkables and community maintenance, which Nykoliation expects will be offset in the bounty homeowners will receive from Remarkables and other benefits. Braestone also has a unique “Friends of the Farm” ambassador program that highlights local artisans who have signed on to offer their expertise in certain fields and, thereby, offering their experience and tips to Braestone residents. “You’re buying into a lifestyle. Everything was done with a very strong vision of Braestone,” Nykoliation says, noting buyers will likely fall into a 60/40 split between those hailing from the Greater Toronto Area and locals. “We appeal to a broad buyer profile both locally and from the GTA, some of whom are five years away from retirement. A third of our buyers are young families, a third middle-aged and the final third retirees.” OH

Building Design is a new and creative architectural firm based in Barrie. We are passionate about modern and contemporary architecture and we want to make it accessible and spread beauty. We design homes for people looking for something special and something different, yet simple, where design meets functionality. From a design perspective, what is the most important room of the house?
Definitely the kitchen. Regardless of the type of client, the kitchen is a focal point that connects the major living areas in the house, and the flow through these areas should be effortless. Today’s kitchens are social and should be thoughtfully designed to be practical, graceful and convivial. What kind of a home would you design for yourself? I envision my house to be like
an art gallery. Open, uncluttered spaces, an interior courtyard connecting different areas and lots of glass – still and warm and cosy. I will design it simple and practical: truth to materials using concrete, wood and matte black steel among others.

Wood is
nature’s product that will show wear and tear over time. Keep dirt and moisture away – daily sweeping and vacuuming will help. Keep outdoor shoes, large dogs and roller-blades off your wood floors – they will not last otherwise, believe us. Don’t overdo the wet cleaning – once a week with a slightly damp cloth will do it. Hands down, harvest season is my absolute favourite time of year. Yes there’s a crispness in the air; yes I love cosy sweaters; yes the turning leaves are beautiful, but none of those compare to the joy of eating scrumptious, local, freshly-picked produce! The only thing that might compare is DRINKING scrumptious, local, freshly-picked produce! There’s no need to reserve the bounty of our gardens and farmers’ fields for forks and spoons – give a glass and straw the overdue honour with one of these harvest-inspired recipes. Apple Pie Smoothie
Pumpkin Chai Latté
Cranberry-Orange Punch
I don’t want to live in a world where the mouth-watering smell of apple pie doesn’t signify the start of harvest season. We grow just about every kind of apple imaginable here in Canada, which turn up in bushels upon bushels at country markets and grocery stores. Why wait until Thanksgiving to enjoy this all-time favourite? Try it as a tasty and healthy beverage.
Pumpkins are synonymous with harvest season and Thanksgiving. We use them as decorations and in many dessert recipes, but it wasn’t until recently that pumpkin became a popular drink ingredient. Here’s a little twist on the much-loved pumpkin latté.
Cranberries don’t come to mind when we think of harvest season, but they grow in abundance here in Canada. They are harvested in the fall once they turn the deep, red colour we’re familiar with. This refreshing recipe uses fresh cranberries and much less sugar than traditional punches. It’s a great go-to beverage for entertaining guests this season. Feel free to spike with a little vodka or gin.
INGREDIENTS: ¼ cup pure pumpkin puree 2 Tbsp maple syrup
INGREDIENTS: 1 cup milk of your choice 1 fresh apple, cored and chopped ¼ cup flaxseed meal 1 Tbsp maple syrup ½ tsp pure vanilla extract
1½ tsp vanilla

DIRECTIONS:
Ice
• Remove from heat, add the tea bags, and let steep for 3-5 minutes.
DIRECTIONS:

• Place cranberries, water, orange juice and zest in food processor. Process until you have a slushy consistency.
Sprinkle of salt
• Place all ingredients in a high-speed blender, blend until smooth and enjoy.
• Transfer mixture to bowl and add club soda. • Let sit in the refrigerator for an hour or two. • Strain into a punch bowl and mix in sweetener. Add orange slices and frozen cranberries. OH

getaway waits serenely on the shore, its cedar-roof shakes welcoming the breeze off the water and the warmth of dappled sunlight filtering through the leaves of nearby trees. Unlike those beach houses, this upscale 3,200 sq. ft. cottage is surrounded by mature Maples and overlooks Kempenfelt Bay from atop a rugged bluff sculpted into tiered gardens and a stone staircase leading to the water’s edge. “It was a straight cliff,” recalls BigEast Construction’s Cole Leibel, who razed a decrepit cottage to make way for this custom creation. With few exceptions, his 12-person team managed all aspects of the build – including the extensive landscaping. “The homeowners really enjoy the lake and wanted a safe access to the water, especially for the children.” At the bottom is a two-storey boathouse with deck that mirrors the design of the main house, from the copper-topped cupola that matches an awning detail on the larger roof above, to the prefinished cedar siding (sourced from Tru North Exteriors) that was chosen to match a sample taken from a Nantucket Island original. “I’m known for my boathouses and shorelines,” acknowledges Leibel, a fourth generation builder who works on several renos and new-build projects at a time – primarily on Simcoe County’s waterfront. “Boating is a passion for me so this focus makes sense, but my company prides itself on providing an overall turnkey experience.” Continued on page 74

home & builder Just beyond the edge of the manicured grass, a soccer ball peeks from the periwinkle waiting to be kicked back into action, and a pair of slacklines offer a silent dare. Beside the detached garage/guest house with dormers and finishes to match the prevalent design theme is an asphalt sports court that invites activity. Between the basketball hoop and hockey net, an abandoned hockey stick stakes its claim against two small scooters. Outdoor living continues out back on an expansive deck that accommodates both dining and lounging under its protective portico. Just three steps down, the lawn follows the curve of a wrought-iron fence built to protect youngsters from the steep drop to the water. The grass extends from a group of Muskoka chairs around a fire pit, to a solitary hammock swaying in the shade. Continued on page 76
RIGHT AND BELOW: The covered porch provides a sheltered area for eating, entertaining, play and watching the action on the water. OPPOSITE LEFT: The all-white interior of the Cape Cod-style main house is fresh and relaxed, perfect for a busy family that arrives ready to have fun. The poplar square-grooved panelling covers every wall and ceiling and is painted Dune White throughout. BOTTOM LEFT: The front exterior shows the beautiful Cape Cod design. BOTTOM RIGHT: The boathouse sits below what used to be a straight cliff. Cole Leibel and his BigEast crew carved out a beautiful landscape that provides easy access to the boathouse and water below.
The multi-level estate awaits the energy explosion that arrives with the two-adult, three-child Pantalone family (and their many friends and extended family members). They show up ready for play. It’s a familiar destination. Jason and Julia Pantalone moved their family into this Innisfil retreat just last summer, but he grew up cottaging down the street at his parents’ place. Now that construction is complete, the BigEast crew ensures vacationers can dive directly into relaxation upon their arrival by maintaining the property year-round. A glance around the front lawn mid-season shows the youngest generation hasn’t wasted time putting its own stamp on the area.

“They have a large family and do lots of entertaining,” confirms Leibel, who leads the way into a great room designed for that exact purpose. A wall of windows and french doors showcase an ideal bay vista while flooding the room in natural light. A simple Dune White paint colour from Benjamin Moore, chosen as the anchor for the entire house, becomes a
varied palette of shadows and shades amid the texture-rich ceilings and walls. Furniture in similar colours is strategically placed to allow an appreciation for both the window view and the floor-to-ceiling fireplace (with a hemlock barn-beam mantel) creating an airy, welcoming environment regardless of the weather outside. “Normally my crew takes the lead on the
design, but this time Julia knew exactly what she wanted,” Leibel explains. Either way, he is able to finish even the biggest projects within a year. “I’m very quick. I try to stay really organized and ensure the homeowners have made their decisions a month ahead of me needing their answers.” Topping the living area is a 10-foot coffered ceiling boasting a deep grid fully lined

with square-grooved panelling assembled of individual four-inch poplar boards. The same tongue-in-groove technique was applied between the beams of the vaulted ceilings over the dining table and in the foyer. A wider plank was used in a similar fashion on each wall. The flooring pattern below combines reclaimed and prefinished hemlock planks in four different widths. Custom floor registers in the same material disappear into the blend, while thicker boards were used for the in-house construction of a matching staircase. The dark floor is offset by unfinished pine pillars (from Trans Canada Wood Products Ltd.) that Leibel weathered outside for a year and treated with vinegar to achieve the rustic effect. Hemlock accents also trim the unique range hood, fridge and the huge island base to contrast with the singular paint colour that is also used on the Shaker-style cabinetry of the kitchen and matched in the Caesarstone island slab and quartz countertops. Upstairs, amid cleverly placed dormers that allow for three additional bedrooms (the master suite is on the main floor), is a cosy sitting area and full bath with a marble-topped double vanity outfitted by Johnstone Plumbing. “That ceiling was the biggest challenge,” admits Leibel, glancing up. “To allow for exposed rafters and insulation, it’s actually a double roof – it took six months to trim out.” It’s an attention to detail that inspired a nation as this house was recognized by Houzz for its favoured design. One of the greatest visual perks of living in this fine country is the ability to witness the glorious changing of the seasons. Our autumn Ontario countryside ablaze with fiery reds, burnished oranges and golden yellows is a magnificent sight to behold. Grab your household canine and set out to explore a nearby walking trail, and see for yourself. Perchance, just as I, you’ll be inspired by Mother Nature’s rich tapestry and be forced to bring home some fall flavour to your garden plot. ST ORY MELAN I E R E KOL A

FALL 2015
P
Perhaps the most obvious way to bring home fall leaf colour is through the majestic Maple tree. Remarkably, of the 150+ species of Maple found throughout the Northern hemisphere, only 10 are native to Canada. Our natural Maple forests of Sugar and Red Maples turn all shades of yellow, orange and red. My favourite large Maple hybrids for a sizzling red feast for the eyes include Red Sunset and Autumn Blaze. A smaller native Maple, oh so easy to place, is the Paperbark Maple. With gorgeous peeling bark, lovely structure and often fabulous autumn colour, depending on the year, this is the perfect small Maple for small spaces. Red Oak is also a tree worth considering. Though its fall display is more subdued, it keeps its leaves much longer than most and even into winter – a noteworthy characteristic in my books. Other important trees for fall pigment include the
yellow hues of the highly ornamental Gingko Biloba and striking orange or red berries of Mountain Ash. Consider a multi-stemmed tree/large shrub such as Canada’s Serviceberry, Pagoda Dogwood or Staghorn Sumac for fantastic fall foliage, and for necessary architectural value. Though the name Sumac may scare some, keep them contained, and you will be rewarded with bright crimson fall vegetation and attention-grabbing fruit. Recent Sumac hybrids such as Tiger Eye are somewhat easier to control and also sport gorgeous chartreuse summer leaves followed by carroty fall leaf hues. Other shrubs for autumn-leaf colour include Snowball Viburnum, Highbush Cranberry (also has red berries) and the ever popular Burning Bush. For berry display, think Pyracanthus Firethorn, Cotoneaster and Winterberry. Continued on page 86

gardening 1. Maple 2. Gingko Biloba 3. Boston Ivy 4. Dogwood 5. Sumac 6. Red Oak 7. Mountain Ash 8. Virginia Creeper
Vines also can add high colouring to a fall flora space. Easily add them to clamber over fences, arbours and outbuildings, and they give a garden a sense of maturity. Boston Ivy and Virginia Creeper (Engelman’s Ivy) have exceedingly vibrant autumn foliage. Virginia Creeper also bears a heavy crop of blackberries. Native Bittersweet Vine sports unusual seed coverings of an orange outer husk that houses bright orange/red fruit within. These beauties generally last all winter long. Just why do fall leaves change their colour and why does the pigment parade change from year to year? During winter, a tree must live off their food stores from the summer season. They shut down their photosynthesis factories (their leaves) and as the bright green of chlorophyll fades away, the yellow and orange colours reveal themselves. Small amounts of these colours have actually been within the leaves all summer long disguised by the chlorophyll. Bright reds and purples are most often made by glucose trapped in leaves after photosynthesis stops, caused by sunlight and the cool nights of autumn. A growing season with ample moisture followed by a dry, cool, sunny autumn with warm days and cool frostless nights provide the best weather conditions for the brightest fall colour display. This does seem like a lot to ask of Mother Nature, doesn’t it? Fall beauty is often forgotten in the planning stages of a garden. Logically it makes sense. Many are inspired to start a garden in spring, enraptured by all the beautiful bright flowers and captivating scents, only to realize those blooms pass rather quickly. People attempt to keep the garden magic going by planting various summer flowering shrubs and perennials. Soon, our garden space is completely filled and only in September is it realized that we have neglected to focus on fall at all. Luckily, any garden can be easily remedied into a rich fall colour palette by adding from the long list of fantastic fall specimens listed here. Come on Canada, extend your garden’s glory and give up some garden space for that special, brilliant and blessed fall colour. Sandpaper (Coarse)
HOW-TO: 1
2
• Pry apart pallets and remove nails. • Draw a pumpkin shape, any size you like, on a piece of plywood and cut it out with your jigsaw. This will be your template.
From creative design and functionality to overcoming the most challenging renovation issues, we are committed to delivering a finished product at a competitive price you will be proud of for years to come.
• Cut two small pieces of pallet wood for support backing and place them on the back of your plywood template. They should be slightly shorter than the height of your template. (see image 1)
3
4
Let Prycon make your dreams come true.
• Lay uncut slats of pallet wood over the backing and template, about ¼ inch or so apart, covering the entire template. Nail or screw the slats to the backing (you’re not attaching the slats to the template). (See images 2 and 3) • Remove template from under backing and slats, and place on top. Trace a pencil line around template. (see image 4) • With your jigsaw, cut slats around pencil line. Now you have your pumpkin. (see image 5) • Cut two identical triangles from some pallet wood and nail or screw them to each of the backing pieces. These will support your pumpkin so it can stand upright. (see image 6) • Cut a piece of tree branch for the pumpkin’s stem.
5
6
• Drill a 5/16-inch hole, 1 inch deep, in the end of the branch as well as the top centre of your pumpkin. (see image 7) • Cut a 2-inch piece of dowel and use it to join the stem to the top of your pumpkin. (see images 7 and 8) • Now you can give your pumpkin a coat of paint. We’ve used Annie Sloan Chalk Paint in Barcelona Orange. • Once the paint is dry, give it a quick sand to distress the edges and bring out the rough texture of the wood. • Repeat these steps to make pumpkins of different shapes and sizes.
