Pancakes with lemon Pancakes are always a treat - and they're nutritious as well as tasty, providing protein, carbohydrate and calcium from the egg, flour and milk. Serves: 4 adults Preparation time: 10 mins Cooking time: 15 mins Ingredients: 125g plain flour 1 pinch salt 1 egg large 300ml 1% fat milk 2 tsp vegetable oil 1 lemon sliced into quarters 2 tsp caster sugar

What to do: 1. Put the flour, salt, egg and milk into a large mixing bowl with 2 tablespoons of cold water. Using a hand whisk or a handheld electric mixer, whisk the ingredients together to make a thin batter. 2. Heat a small heavy-based non-stick frying pan and add 2-3 drops of oil for each pancake you make. Spoon in about 3 tablespoons of batter, tilting the pan as the batter is added to swirl it over the base. 3. When the underside of the pancake is cooked, flip it over to cook the other side. Cook 8 thin pancakes in this way - and serve them as soon as you cook them, or keep them warm in a low oven until all 8 are ready. 4. Serve 2 pancakes to each person, with a lemon quarter for squeezing over them and half a teaspoon of sugar.

Tip 1: Children might prefer orange juice to lemon juice, so give them the choice. Tip 2: You can cover and chill the batter for up to 4 hours before making the pancakes, though stir it well before cooking them.
