Gluten free pizza base · 100 g brown rice · 100 g glutinous rice · 50 g potato starch · 30 g gluten free cornflour · 1 tsp xanthan gum · 1-2 tsp salt · 1 tbsp white vinegar · 20 g olive oil, plus extra for drizzling · 180 g warm water · 20 g sugar · 2 tsp dried instant yeast
Gluten free pizza base 1 Line a pizza tray with baking paper and set aside. 2 Place brown rice and glutinous rice into mixing bowl and mill 2 min/speed 8. 3 Add potato starch, cornflour, xanthan gum, salt and vinegar and mix 5 sec/speed 4. 4 Add oil, water, sugar and yeast and mix 15 sec/speed 4. 5 Transfer mixture onto prepared pizza tray. Drizzle dough with extra oil and use fingertips to press dough out evenly to edge of tray. Cover tray with baking paper and leave to prove in a warm place for 30 minutes. Clean and dry mixing bowl. 6 Preheat oven to 220⁰C.

Rocket pesto 7 Place garlic, rocket, cashews, sunflower seeds and pepitas into mixing bowl and chop 5 sec/speed 7. 8 Scrape down sides of mixing bowl with spatula and blend 8 sec/speed 8. 9 Add lemon juice, oil and salt and mix 10 sec/speed 4. Transfer into a sealable container and place into refrigerator until ready to use. Clean and dry mixing bowl. Assembly 10 Place Parmesan into mixing bowl and grate 20 sec/speed 9. 11 Remove baking paper from top of pizza. Bake pizza crust for 5 minutes (220⁰C). Remove pizza from oven and reduce oven temperature to 200⁰C. For a crispy crust, carefully remove baking paper from underneath base of pizza. 12 Spread pizza base evenly with half of the pesto. Sprinkle Parmesan and blue cheese over pesto. Arrange slices of pear over cheese and bake for 15-20 minutes (200⁰C) or until cheese is bubbling and pears are just cooked. Garnish with rocket before serving.
