We have an extensive range of exotic game meats and birds. There is limited stock, so please order early to avoid disappointment!
Helpful Hints
We recommend all beef and lamb products to be served hot as it will enable carving to be much easier. Turkey, chicken and pork, however, will slice better if cooked the day before. You can then serve cold or re-heat already sliced.
Whole Turkey
(Cooking guide for Fresh Turkey) 1. Fill Turkey with desired stuffing. 2. Tie legs together and cover wings with alfoil to avoid burning. 3. Wipe turkey well with damp cloth. 4. Soften butter and spread all over turkey. Season with salt and pepper. 5. Place on rack in roasting pan, add 2 cups of chicken stock and pour over turkey. 6. Cover the baking dish with foil and roast turkey in a moderate oven (180 deg) for 40 minutes per kilo. Baste every 25 minutes and add more stock if required.
