Zest and juice lemon, mix with 1-2 cloves minced garlic or shallots and stir into container of ricotta cheese. Place a dollop of this mixture on each mini toast and top with chopped toasted hazelnuts and a small drizzle of honey.

Cut potatoes in half lengthwise and boil in salted water until fork tender. Cut the tip off a head of garlic, toss in olive oil, wrap in foil and roast at 400˚F for about 30 minutes. Remove roasted cloves, peel and mash then blend with one container of crème fraîche. Toast 1 cup of bread crumbs at 350˚F until golden brown. Top halved potatoes with crème fraîche mixture, sprinkle with bread crumbs and chopped parsley. Add salt and pepper to taste.

Run wooden skewers in cold water and pat dry. Alternate raw shrimp and diced pineapple on skewers, cover with barbecue sauce and bake at 350˚F for about 5-10 minutes, until shrimp are firm and opaque throughout. Remove from oven and garnish with chopped chives or green onion.

Hard boil 1 egg for every 3 appetizers you'd like to make. When cool, peel and slice. Cut baguette into quarter inch thick slices and toast. Smash avocado and add a little lemon juice, then spread on baguettes. Top with sliced eggs, one slice of smoked salmon and chopped chives.

Slice boneless, skinless chicken breasts into strips. Pulse crispy onions in food processor until smooth, combine with bread crumbs and set aside. Dredge chicken in flour with salt and pepper; dip each strip in lightly beaten raw egg then dredge each strip in the onion and bread crumb mixture. Arrange strips on baking sheet and bake at 350˚F for 15-20 minutes or until chicken has reached an internal temperature of 165˚F. Serve with dipping sauce.

Place one piece of string cheese at an angle on top of an egg roll wrapper, then roll wrapper over cheese and seal by coating the corner with water and pressing together. Brush lightly with oil and bake at 350°F until crispy, about 12 minutes, turning after 6 minutes. Serve with a side of marinara for dipping.

Set blue cheese out so it reaches room temperature. Toast walnuts about 6-10 minutes at 350˚F, stirring halfway through, until toasted brown and fragrant. Pulse in food processor or chop roughly with a knife. Remove grapes from stems and toss into warm/softened blue cheese, breaking up any large crumbles. Ensure the blue cheese covers the grapes by gently smearing as necessary. Roll the cheese-coated grapes in walnuts.

Heat one cup of cider for each serving in a large saucepan. Pour cider into mugs, top with whipped cream and drizzle with salted caramel sauce.

Grenadine

Mix quarter cup each lemon juice, simple syrup and grenadine. Fill glass with ice and 2 ounces of lemon mixture. Add ginger ale to fill glass and garnish with a maraschino cherry. Great as a single serving or in your punchbowl.
