Johnson & Wales University is a leader in beverage education, with thousands of candidates who have been certified by various credentialing organizations. Johnson & Wales University provides courses to help degree candidates earn the Society of Wine Educators’ Professional Beverage Certificate, Certified Specialist of Spirits (CSS) Certification and the Certified Specialist of Wines (CSW). Johnson & Wales is also an accredited WSET® Approved Program Provider, offering three levels of courses. Four official tutors of the L’Ecole du Vin of Bordeaux augment students’ Bordeaux wine knowledge. certification SWE Beverage Specialist Certificate Saturdays, 9 a.m. to noon: Oct. 13, Oct. 20, Oct. 27, Nov. 3, 2012 Exam: Nov. 10, 2012, 9 a.m. This course is designed to give entry-level managers or servers the knowledge to increase their sales across the entire beverage field, from non-alcoholic adult beverages — including waters, tea and coffee — to beer, wine, spirits and liqueurs. During the course, participants review and taste samples of each beverage category. The cost includes the Professional Beverage Study Guide and the exam for the Society of Wine Educators’ Professional Beverage Certificate. Fee: $595
SWE Certified Specialist of Wine (CSW) Saturdays, 9 a.m. to noon: Jan. 12, Jan. 26, Feb. 9, Feb. 23, March 9, 2013 Exam: March 23, 2013, 9 a.m. The Certified Specialist of Wine (CSW) Exam is a rigorous exam that tests a candidate’s wine knowledge and mastery of key elements within the worlds of viticulture and wine production. This certification is widely recognized and highly regarded by the international wine and spirits industry. The CSW Exam consists of 100 multiplechoice questions, with all question content drawn exclusively from the CSW Study Guide. Candidates are provided with one (1) hour in which to complete the exam. Accordingly, the CSW certification is meant to be a self-study educational program. The preparation course is offered over a 10-week 23
period, with five three-hour classes to assist students with their course of study and reinforce their learning with tastings. Fee: $895
SWE Certified Specialist of Spirits (CSS) Saturdays, 9 a.m. to noon: Jan. 19, Feb. 2, Feb. 16, March 2, March 16, 2013 Exam: March 23, 2013, 9 a.m. This certification is widely recognized and highly regarded by the international wine and spirits industry. The Certified Specialist of Spirits (CSS) Exam consists of 100 multiple-choice questions, all of the material for which is drawn exclusively from the CSS Study Guide. Candidates are provided with one (1) hour in which to complete the exam. Specific topics tested include: Fermentation and Distillation, Whiskies, Brandies, Vodka, Liqueurs, Gin, Rum and Tequila. The course runs every other week for 10 weeks, for a total of five three-hour classes. Course fee includes tastings, the Study Guide and registration for the exam. Fee: $895
Bordeaux Wine Certificate Saturdays, 9 a.m. to noon: March 23, March 30, April 6, April 13, 2013 The Bordeaux Wine Certificate is a four-week (16-hour) course accredited by L’Ecole du Vin of Bordeaux, the official educational branch of the Interprofessional Bureau of Bordeaux Wines. Upon successful completion of the test, candidates receive a Bordeaux Wine Certificate from
classes L’Ecole du Vin. This course is ideal for members of the trade or wine enthusiasts who want to learn more about this all-important and dynamic wine region. Fee: $395
WSET Foundations Saturday, 9 a.m. to 4 p.m.: Sept. 29, 2012 or April 13, 2013 The Foundations Certificate is an entry-level introduction to wine. It is ideal for consumers, restaurant or retail sales professionals who are new to wine. It is also a great course for those wanting to learn the primary wine styles, grape varietals, tasting techniques, food and wine pairing and service. The class is a one-day, six-hour session concluding with a short multiple-choice exam. Fee: $225
WSET Intermediate Awards Level 2 Thursdays, 7–10:30 p.m.: Sept. 20–Nov. 15, 2012 Jan. 10–March 14, 2013 (no class March 1) March 25–May 16, 2013 The internationally recognized Wine & Spirit Education Trust® is offering a special program for wine enthusiasts, food and beverage professionals, and hospitality management. This intensive nine-week program includes wine production and classification, and a fascinating look at all the major wine growing regions of the Old and New World. Sparkling and fortified wines are included, as well as a separate focus on spirits and liqueur.
This course is recommended as a starting point before proceeding to the Advanced Level. Fee: $850
WSET Advanced Awards Level 3 Tuesdays, 7–10:30 p.m.: Jan. 29–May 14, 2013 (no class Feb. 26) This program is designed for wine enthusiasts and professionals who are qualified at Awards Level 2. Students are typically trade employees who advise management, answer consumer questions, and need to make informed selections of wines and spirits in the hospitality, restaurant, retail and wholesale industries. The process of wine production is examined in great detail. Students learn production methods and labeling laws as they relate to wines from around the world, and gain a thorough knowledge of wines from different regions of Europe, the Americas, Australia, New Zealand and South Africa. Champagne, Sherry, Port, and other liqueur wines, distilled spirits and liqueurs are taught. In short — the program covers everything necessary to become a true expert in the field. Fee: $1,350

This fun-filled, four-hour class compares classic Old World wines to their New World expressions to determine whether there are indeed significant differences in either the terroirs or approaches that winemakers take to produce international varietals. Fee: $125
Do the wines of the Southern Hemisphere have a distinctiveness from their northern counterparts? This class looks at examples of classic varietals from Argentina, Chile, Australia, New Zealand and South Africa and compares them to their classic counterparts in the Old World and the U.S. Fee: $125
Sparkling Wines and Champagne Saturday, Oct. 6, 2012, 9 a.m. to 1 p.m. What makes Champagne special, and can other sparkling wines reach its complexity? Participants taste a broad spectrum of sparkling wines from California, Southeastern New England, Franciacorta, Prosecco, Cava and Crémants. Fee: $125
Mixology Basics Saturday, Oct. 20, 2012, 9:30 a.m. to 1:30 p.m. This four-hour class is great for both amateurs and budding bartenders. It gives a hands-on overview, including practice building cocktails and mixed drinks using professional techniques and tools. Participants learn the reasons behind building drinks in a precise manner, and are taught their presentations according to recipes. Fee: $99 45
Beer Brewing Class Saturday, Oct. 27, 2012, 9 a.m. to 2 p.m. This introductory five-hour class teaches the basics of all-grain brewing, including tasting and understanding the variety of malted grains and hops used, how to read a beer recipe, and the secrets of time and temperature controls. Students work alongside a Certified Beer Judge to brew a half-barrel batch of craft beer from start to finish. Fee: $125

This four-hour class focuses on the classic cocktails and why they have enjoyed such a renaissance. Participants enjoy practicing correct procedures, and produce real cocktails for each other to sample. Fee: $125
This four-hour class is for participants who have already taken the Mixology Basics class. It focuses on the best techniques while demonstrating how to craft cocktails, and how critical all the ingredients are to building them. Participants are given mystery ingredients and provided with an opportunity to craft their own cocktails using the principles taught in the class. Fee: $125
Beer Appreciation Class Saturday, Feb. 9, 2013, 9 a.m. to 1 p.m. This four-hour introductory class teaches students how to taste and understand beer by learning the basics of the brewing process, including beer ingredients, and how to identify the various classic styles of beer brewed around the world. Guided tastings with a Certified Beer Judge give students a solid understanding of the variables that define a specific style, as well as the foundations of beer and food pairing. Fee: $99
Food and Wine Pairing Saturday, April 27, 2013, 9 a.m. to 1 p.m. This four-hour class is taught by a Certified Wine Educator. It looks at a new paradigm for pairing wines and food, giving the participant a deeper understanding of the principles underlying the successful matching of foods to wines. Food tastings accompany wines to illustrate the points that are made. Fee: $125
