from the president Seattle and the Northwest get a little bit of extra attention on KCTS 9 this month, starting on KCTS 9 Cooks: Chef’s Table—the 50th installment of our locally produced cooking series. Join talented local chefs for favorite recipes and kitchen tips live from our studio on February 4 at 11:00 a.m. As usual, we’ll have all the recipes compiled for easy reference in a handy companion cookbook. Our Something in the Water short for the PBS Arts Fall Festival late last year looked at some of the artists who are defining a new Seattle sound. Watch it online at KCTS9.org, and tune in to see a full set from Seattle’s The Head and the Heart on Austin City Limits, Sunday, February 26, at 11:00 p.m. We’ll also debut a new KCTS 9 original, I’m not Les, on February 27 at 9:00 p.m. And you’ll see the best in Northwest independent film all month on Reel NW. From award-winning arts performances to the joys of food and cooking to independent film, we’re bringing you the best of PBS and sharing the stories and people of Seattle and the Northwest with the world. It’s only possible with your support. Thank you.

We hope the fabulous food will inspire you to support KCTS 9 and to get the companion cookbook and DVD for yourself. Meanwhile, please enjoy this classic creation from Chef Renee Erickson of Seattle’s Boat Street Café.
Chicken Normandy serves 2 4 1 2 1 2
tablespoons unsalted butter yellow onion, diced deboned chicken breasts, skin on Granny Smith apple, thinly sliced, skin on cups plus hard dry cider (Boat Street uses Westcott Bay Orchards Vintage Cider from San Juan Island.) cups heavy cream tablespoons Dijon mustard teaspoons fresh thyme, chopped teaspoons salt
2 4 2 2 Melt butter in a saucepan. On high heat, add onions, sauté until translucent, and add chicken breast, skin side down. Cook for 5 minutes until
skin begins to brown. Add sliced green apple, turn chicken over, and continue to cook for 5 minutes. Add 2 cups hard cider and simmer to reduce by half. Add more cider to get more sauce. Let reduce a bit, then add heavy cream, mustard and thyme, then slowly simmer. (Make sure to stir in the mustard, or it will remain in a lump.) Continue to cook for another 5 minutes or until chicken is cooked through. Be careful not to cook the sauce too hard, or it will break. In the event that it does, add a little more cream and incorporate to bring the sauce back together. Check for seasoning. Pull out apples and arrange on plate. Serve with roasted potatoes, crusty bread, and hard cider or light, red Beaujolais.
