he Montreal Jewish community is fortunate because the city is endowed with numerous establishments to hold weddings and special events. Among three halls designed to serve diverse occasions are Raicek Hall, Cohen Hall and the Singerman Ballroom. The Chevra has various packages that include bar service, curtaining, lighting, and rentals, that benefit
the customer. Raicek Hall accommodates up to 130 people and is booked for receptions, ketubah signings, brit milahs, baby naming’s, bar/bat mitzvahs and other occasions. Cohen Hall, located downstairs, is an attractive area, where up to 400 people can socialize over cocktails. The grand Singerman Ballroom is a magnificent, stateof-the-art hall that seats over 450 people for dinner and dancing. Wedding hosts and event planners request it to hold banquets, receptions, bar/bat mitzvahs and fundraisers. The ballroom is equipped with LED and PIN lighting.
With regard to caterers, people may have a preference; the Chevra is open to all MK certified caterers. The Chevra will provide floor plans, and party planners can arrange for their own florists, photographers, orchestra, DJ and other specialized services. Valet parking is recommended. The Chevra is also well received by the chassidic community as a venue for weddings. f you Google, Harold’s Old Jokes on YouTube, you are bound to laugh, whether you click the first video Harold Finkelstein recorded at 90 or a recent one. “And I plan to make another one next year,” says Finkelstein, who turned 91 last August, and is about to mark a milestone on Feb. 23, when Ruth, the love of his life, joins him in celebrating their 69th wedding anniversary. Ruth, 90, recites the details of their courtship, wedding and family life as if it were yesterday. Harold was always a bright spark from their first meeting on a blind date, she relates. That day they had planned to take a bus to the bowling alley but Harold surprised her, ducked into a parked car and pretended to kick-start it. Initially, Ruth, then 17, hesitated to get in but relented because she was attracted to him. “I was embarrassed to admit the dilapidated car was mine,” Harold recalls, explaining he was smitten with Ruth and determined to impress her. From then on, they “went steady” and became engaged a year before the wedding. “Harold called me at work one day and suggested we meet at lunch hour because he wanted to buy something. When he led me in a jewelry store, I became suspicious.” At the time, Harold resided and worked with his grandfather, and had managed to reserve $1,000 for the ring. The couple was married in 1947 at Adath Israel Synagogue, then on Ducharme and McEachran close to where Ruth lived with her parents and siblings before marriage. In 1949 and 1950, they were blessed with sons Michael and Gerald ( Gerry) and in subsequent years a grandson. Ruth and Harold were born in Montreal and hail from Ashkenazi backgrounds.
Ruth went to work at Greenberg’s department store after graduating from Strathcona Academy. Faced with financial constraints, Harold sought work at 14. Over the years, he succeeded in sales, real estate and the needle trade. Moreover, for a while, he also managed his half brother, Marty Hill’s recording career. “My husband is a self-made man,” says Ruth. Harold was the designated breadwinner and Ruth, the homemaker. They celebrated Jewish holidays and Ruth used to invite friends, along with their children, for Shabbat dinners. “We’re still very close with my late friend’s daughter, and we consider her family part of our own,” Ruth says. When the boys were in their teens, the couple bought a home in Chomedey. They sold it in 2003 and acquired a condominium in Cote St. Luc. Ruth still cooks, and seven years ago, she took her son Gerry’s healthy eating advice. “Now, I serve lots of fresh fruit, salads and baked, not fried vegetables,” she says. They both follow exercise regimens. In the ’80s, Harold was an endurance swimmer, Ruth says, “so he’s always kept in shape.” Harold says that he goes to shul on Saturday, “so I don’t work out.” Gerry takes them on short trips to Ottawa and Quebec City but they gave up Miami four winters ago. Saturday night, it’s out to dinner with friends. Regarding their secret for marriage longevity, they contend marriage is built on admiration and respect. “Ruth never makes bad remarks behind people’s backs,” Harold says. He boils down his advice to newlyweds. “Never go to bed angry. Work it out.” Ruth is grateful they have each other. “He still wakes me up every night to say how much he loves me.” n

L
ike any other bridal boutique, volunteer co-ordinators, Lieba Jacobson and Claudia Polachek, prepare for their day by tidying up the fitting room and making sure their selection of bridal gowns and accessories are neatly arranged and ready for the day’s customers. The appointments are constant at Gemach Naomi Gittel – a special bridal boutique where brides who cannot afford to purchase or rent a gown can find the wedding dress of their dreams. Gowns are donated from recent brides and gown rental establishments, and include overstock from bridal companies. “Our service is not a charity – it is a loan for anyone who wants to use our service, no questions asked,” says Jacobson. The boutique is housed in the Chevra Kadisha B’nai Jacob Synagogue, conveniently located on Clanranald Avenue in the city’s west end. “Our mission is simple,” says Jacobson. “We want to be able to bring joy to a bride on her wedding day.” Gemach Naomi Gittel is named in honour of Naomi, a child who died at five years of age. She was the daughter of close family friends, and Jacobson wanted to ensure that the little girl’s name lived on by providing for brides, as she did not live to celebrate her own wedding day. “In her remembrance we make sure brides can live their dreams,” says Jacobson. Jacobson began by receiving brides in a small room in her home in 2007, and moved to the fully appointed premises at the Chevra in 2010. “We are grateful to the synagogue for providing us with such a beautiful space where we can give our brides a true boutique style experience when looking for their wedding gown,” says Jacobson. Unique to Montreal, Gemach Naomi Gittel’s focus is to allow a bride to feel special on her wedding day. “We will do everything we can to help the bride look and feel beautiful on her special day,” says Jacobson “We are so happy we can make her feel like a princess.” The word Gemach is an acronym for acts of kindness. The boutique is open to everyone from all religions and walks of life. “Anyone who calls us is welcome,” says Jacobson. The selection of gowns suit a range of styles, and alterations can be made to accommodate a bride’s signature style. “The bride’s only obligation is to have the gown cleaned and brought back as

soon as possible after the wedding,” says Jacobson. The upscale selection of wedding dresses at Gemach Naomi Gittel includes gowns from designers such as Vera Wang and Carolina Herrera, as well as many unique offerings from local suppliers. Fundraiser fashion shows are held periodically to raise funds for the boutique. Accessories such as veils, head pieces and shoes are also stocked. The final step of a Jewish wedding’s chupah ceremony is the moment that the groom steps on the glass to shouts of “mazal tov!” There are countless interpretations for the tradition of breaking a glass. Some see it as a reminder of the destruction of the First Temple of Jerusalem. Others say it is meant to remind us that marriage is as fragile as glass. It also has been interpreted to demonstrate how life is so fragile that the couple should enjoy every day as if it were their last together. “Can you imagine – you can take a perfectly formed object and smash it.… We are so perfectly formed as we stand under the chupah. It is true that life is fragile and sometimes fragmented, but HaShem [God] responds to a broken heart,” says Chana Perelman, director of Judaica.com. Whether progressive or traditional, reli-
gious or secular, Jewish weddings almost always include the breaking of a glass. At some weddings, and certainly historically, people used light bulbs or wine goblets wrapped in cloth napkins. Today, however, there are many artists designing vibrant, trendy, and often hand-blown Jewish wedding-breaking glasses, and ultimately imaginative keepsakes in which to keep their shards. Perelman says it was artist Gary Rosenthal who popularized selling beautiful breaking glasses. She highlights the breaking glasses of artist Sara Beames, who produces two different lines of glasses to smash – eight colours in hand-blown glass and five that come in an embroidered “Ani l’dodi v’dodi li” (Hebrew for “I am my beloved’s, and my beloved is mine”) silk organza bag. Yet Perelman says the real joy comes not necessarily during the moment of the breaking, but when the couple decides to keep the glass. “Assign a reliable person – family member or friend – to take care of getting the glass from under the chupah. The last thing you want is for it to get swept away by the hall,” says Perelman.

What can you do with those shards? Here are seven ideas: Box it up If you choose a dynamic breaking glass in a vibrant colour, simply boxing the shards in a Lucite or glass box can be a real attraction. The box can sit on a bookshelf or be displayed on a countertop. The box can be purchased at a craft or jewelry store. Keeping such a box around, says Perelman, reminds the couple of that happy “mazal tov moment.” Bag it Shari Klein created a keepsake to help engage her to-be step-children in the wedding ceremony. Today, it beautifies her new home. It was a do-it-yourself project. She purchased an off-white muslin bag with a drawstring and fabric crayons. The children – two boys, ages six and eight – were asked to draw what they felt depicted the special day on which their dad would marry his new wife. Continued on next page

She says a couple can place the tzedakah box by their candlesticks and give tzedakah as a family every Friday evening, collecting from their children as the family grows.
Design a piece of jewelry The bride can take a piece of glass and commission a keepsake piece of jewelry. A search on Etsy.com reveals a lampwork necklace from the broken glass of a Jewish wedding, created by Sari Glassman, who explains on the product page that she melted the pieces from the broken glass in the flame and added to them a 22-karat gold leaf. “Do you know a woman who wants to get married? One can visit a paint-and-glaze store and ask to use the glass as part of a mosaic pottery project, or commission an artist to create their ideal piece. Search for another craft idea, or come up with your own! Pinterest is an excellent platform for finding creative ideas for what to do with your broken wedding glass shards. Put “broken glass art” in the search bar and you’ll find everything from mirrors, to mosaics, to glass bottle collectibles, to garden stepping stones. Faye Miller says it’s a joy to work on breaking glass keepsakes. “I think the glass shards themselves are beautiful, and the fact that they harken back to the earliest days of the Jewish people is very meaningful,” says Miller. “How wonderful to have a piece in your home that evokes memories of our people as well as the special moment when you became husband and wife. I love my job and consider it an honour when brides and grooms select my art for their wedding glass.” n

re you giving a bridal shower this season? Don’t let the happy occasion give you the jitters. This is a time to be joyful! You don’t have to have lunch at a trendy restaurant. Bridal showers can be a kinder, gentler experience. It’s about gathering our favourite friends and family and toasting the bride and her beloved. Formal, sit down, bridal luncheons are very last century. Today’s guests would rather pick up their food and kibbitz with their friends. Mingling is more fun than sitting in front of a calligraphed place card, smiling blankly at the person to your left. Everyone enjoys sampling a myriad of flavours, textures and consistencies. We love holding food in our fingers. The conclusion – finger foods. No forks, no knives, just cocktail napkins and paper plates. Don’t cover every inch of the buffet table with food. Leave space so people can put down their plates. Food is always more appealing if it’s presented on a beautifully set table. Choose a colour scheme. Pinks, lavenders, light
shades of blues and greens are traditional for showers, but you can make your table more dramatic by throwing your favourite shade into the mix. Buffet tables crowded with food, all at the same level, are out. Assemble a variety of boxes – different shapes, sizes, and heights, making sure each one will accommodate a platter of food. Drape a cloth over each box – you can create a collage effect with different patterns or simply an inspiring accent within your colour scheme. Use colourful trays of silver, porcelain, wood, or glass; place a platter of food on each box. The effect will be a gorgeous, colourful table with food floating at different levels.
Fresh salmon tartare
For this recipe, buy the freshest salmon available. o 1 1/2 lb. fresh salmon, finely chopped o 1/4 cup minced onion o 1 garlic clove, minced o 1/2 tsp. salt o 2 tbsp. freshly squeezed lime juice o 2 tbsp. freshly squeezed lemon juice o 1 1/2 tbsp. fine brandy o 2 tsp. Dijon mustard o 2 tbsp. finely chopped fresh dill
o 2 tbsp. finely chopped fresh parsley o 1/2 tsp. freshly ground black pepper o 1/4 cup sour cream o 4 lemon wedges for garnish In a bowl combine all but the last 2 ingredients; blend gently but thoroughly. Chill for 3 to 6 hours. To serve, divide mixture in half, pile salmon onto 2 serving platters. Form into 2 nice looking mounds. Top with sour cream. Garnish with lemon wedges. Serve over ice. Place one tartare on the buffet, the other in the refrigerator as backup. Serve with hot grainy bread.

Stuffed Portuguese artichoke bottoms o 8 medium artichoke bottoms, fresh or canned o 1 tbsp. olive oil plus more for sautéing o 2 cloves garlic, minced o freshly ground sea or kosher salt to taste o freshly ground black pepper to taste o 1 large onion, chopped o 4 medium tomatoes, chopped coarsely o 1/2 tsp. dried thyme o 1-2 tbsp. fresh basil o 1/4 cup Italian parsley, chopped If using canned artichoke bottoms, remove from water; rinse well. Place in pan with 1/2 cup water, olive oil, 1 clove garlic, salt and pepper. Cook over low heat for 20 minutes. Drain. In a separate skillet, sauté remaining garlic and onion in olive oil until golden brown. Add tomatoes, cover; cook for 10 minutes. Season with salt, pepper and dried herbs. Place mixture over artichoke bottoms; cook for additional 5 minutes over low heat. Transfer to serving dish. Sprinkle with parsley and if desired, Parmesan; serve at room temperature. Serves 6.
Apple, pear, pomegranate and fennel salad with orange vinaigrette If one of your guests doesn’t like fresh fennel, leave it out and increase amount of ground fennel seeds. We found a feta cheese made of soy. If serving with dairy meal use regular feta cheese. Orange Vinaigrette o grated zest of 1 orange o 1/4 cup fresh orange juice o 2 1/2 tbsp. fresh lime juice o 1 tbsp. honey o 1 1/2 tsp. cider vinegar o 1/2 cup extra virgin olive oil o 2 tsp. chopped fresh mint o 2 tsp. chopped fresh basil o 1/4 to 1/2 tsp. fennel seeds, toasted and ground o Kosher salt and freshly ground pepper to taste Salad o 1 medium fennel bulb, trimmed, then cut crosswise into paper-thin slices o 8 oz. arugula, trimmed and torn into bite-sized pieces
o 3 ripe medium Anjou or Bartlett pears, unpeeled, cored, and thinly sliced o 2 crisp Granny Smith apples, unpeeled, cored and thinly sliced o 1/4 to 1/2 cup pomegranate seeds o 3 oz. soy feta cheese, crumbled (optional) For vinaigrette: Combine orange zest and juice, lime juice, honey, and vinegar in blender. With machine running, gradually add oil and blend until thickened. Transfer to bowl; stir in mint, basil and fennel seeds. Season with salt and pepper. Cover and refrigerate until ready to use. For Salad: In 3 separate bowls toss fennel, arugula, pears, apples and pomegranate seeds with a few tablespoons of vinaigrette. Heap portions of arugula mixture in middle; top with fruit mixture, then the cheese. Drizzle with remaining vinaigrette and serve immediately. n

Isabel and Joe Presser: family ties flourish in marriage

I
sabel (née Klempner) Presser has shopped for clothing for a number of simchahs since the 1950s, but the purchase of her kid brother’s bar mitzvah suit led to a fruitful relationship. Although Steven Klempner outgrew his fine suit, the “suitor” who served him has been married to his sister for over 55 years. “It was the first time I had met Joe, even though we lived around the corner from each other,” Isabel says, recalling the morning she agreed to accompany her mother and brother to Cooper Clothing, a menswear manufacturer. Isabel and Joseph “Joe” Presser became engaged in 1959 and were married at Congregation Beth Moshe in 1960. Since then the couple has been blessed with three children, seven grandchildren, and a great-grandchild. Before they started a family, Isabel was a bookkeeper at the Canadian Jewish Review. Joe’s career life began in his teens at Cooper Clothing. The chemistry that sparked the romance continues to flourish. The couple shares the same family values, Ashkenazi roots, and pride in the Jewish community. “My father died in 1944, when I was eight years old,” Joe says, “and my mother was left a widow with six children. By 1950, I was already working at Cooper Clothing and helping at home.” Working his way up the ladder, Joe bought the company in 1980. He ran two factories and had a sales team on the road. Despite a heavy work load, he made sure to join his family at the dinner table. In 1963, Joe and Isabel settled in Cote St. Luc, where they raised Shari (David Perl), Mitchell (Robyn Silverman), and Janet (Michael Maislin). Although Isabel doesn’t profess to be as keen on sports as Joe, she has grown fond of baseball and hockey.
The family was ardent Montreal Expos fans and attended games. Joe participated in Cote St. Luc hockey and baseball leagues. Joe credits Isabel for making sure everything ran smoothly at home. “She did it all,” he said, referring to the children, meals, and household tasks. “She’s a great cook, and to this day, the children and grandchildren gather at our condo for Shabbat dinners.” On major Jewish holidays, the extended family is also included. Isabel’s prize needlework continues to delight their bar mitzvah progeny, says Joe, referring to her stunning kippas and tallis bags. The couple belongs to Beth Zion Congregation. Joe, who presided over the men’s club in the ’70s, was elected president of the congregation in 1993, and has run the successful cantorial concerts for the past decade. This year’s event drew over 1,000 people. Motioning to a photo in which he is standing next to the late Rabbi Sidney Shoham at last year’s cantorial event, Joe remembers how shocked he was to wake up the next morning and learn of the rabbi’s sudden death. “Over the years we became very close, golfed in Florida and conferred on synagogue activities,” he said. Joe’s early community pursuits paid off when he retired in 1996. Unlike many retirees, he was well prepared for the transition, and took advantage of the opportunity to intensify his endeavours. He became active in the Cote St. Luc Senior Mens Club and recently ran a gala that drew 400 people. He is active on the Cummings Centre Seniors Foundation Sports Celebrity Breakfast Committee. Joe and Isabel, along with other Montreal retirees, take a winter hiatus in Florida. They head back for Passover and also look forward to the Cummings event, which raises money for seniors in crisis. n

ith so many things to do between planning a wedding and settling down after the honeymoon, couples may be tempted to put off sending out thank-you cards. Opinions vary on the content of the messages or the means of communication, however, everyone agrees it is courteous to express gratitude without undue delay. In the digital age, couples tend to set up wedding websites soon after they announce their engagement. These sites invariably include photo galleries, blogs, videos, links to bridal registries and other news. The celebrants may opt to email invitations to prenuptials and organize web posts to make announcements and acknowledge good wishes. Although some people use online communication for everything connected to the occasion, many continue to order personal wedding stationery and send out stamped, addressed formal invitations and RSVP cards. In addition, they complement the order with thank-you cards to have on hand. Author Peggy Post, an institute spokesperson for The Emily Post Institute, renowned for setting standards for etiquette practices in North America, sets three months as the maximum grace period before sending out thank you cards. She lauds personalized thank-you notes. She does not advocate shortcuts such as phoning and emailing. Moreover, purists lack enthusiasm for thank- you cards conveying the same message to everyone on the list. Retired social worker Ann Gold, 68, moved to Montreal from New York in the ‘60s. “Between my children, grandchildren, former colleagues and friends, I’m invited to lots of simchahs. I send lots of gifts and I don’t complain if recipients thank me by email or phone. Of, course, I prefer a handwritten personal card but even if it’s an impersonal printed one, as long as I’m alerted that they received the gift, I’m satisfied.” Graduate student, Avery Levy, 26, advo-
cates scrapping printed invitations, thank you cards and sending anything by regular mail. “It’s the 21st century, online access is simple, free and quick.” Gold and Levy wish more celebrants would express thanks within a month after they received gifts. “In one instance, I couldn’t place the name of the bride and groom on the thank you card because so many months had elapsed since the wedding,” Gold said. “Fortunately, I made the connection a few weeks later when I was seated near them at a relative’s bar mitzvah.” Levy and Gold have learned not to assume that gifts sent out automatically arrive in the right hands. “I was in a rush and parking was tough, so I left the gift, which was clearly addressed, with the doorman in the condo lobby,” Gold said. “The next day, I saw the couple at the supermarket and asked if they received the gift. Evidently, the doorman had neglected to inform them it had arrived. Luckily, it had been safely locked away and they were able to retrieve it. Now, I make sure to check right away.” Experts offer the following tips on how to effectively acknowledge wedding gifts. For starters, make a list of everyone invited to prenuptials and the wedding. Leave plenty of space to add names when unexpected gifts arrive from social or business acquaintances who were not on the invitation list. Note full personal and, if relevant, business names and coordinates. Describe the item, the source and date it arrived. Include a column to check off when thank you cards have been sent out. Recipients of handwritten messages appreciate the personal spin on each acknowledgement. “It makes me feel special,” Gold observes, “especially when people write something complimentary about the particular gift I sent them. If it’s monetary, some even indicate what it is going toward.” n

oneymoon choices can take newlyweds to far flung destinations from Bali to Barcelona, but for couples looking to stay a little closer to home while experiencing history, charm and time for relaxation, Québec City fits the bill. Referred to as the crown jewel of French Canada by the travel experts at Lonely Planet, Québec City is a short car, train or plane ride from many Canadian cities. The drive from Montreal, at a distance of 255 kilometers, will get you there in just under three hours on highways 40 or 20. As the capital of the province of Québec, Québec City’s roots trace back to the extensive travels of French explorer Jacques Cartier in 1535 and the establishment of an official colony in New France by Samuel de Champlain in 1608. With its origins in the fur trade along with the logging industry, Québec City saw many battles between the English and French within its walls particularly on the Plains of Abraham, now a beautiful park enjoyed all year long by locals and tourists alike. Québec City’s Vieux Québec, (Old Town) is the only remaining fortified city in North America outside of Mexico. In 1985, it was named a UNESCO World Heritage Site. Today’s Québec City successfully blends old architecture from the 16th and 17th centuries with modern office and government buildings, which straddle the majestic north shore of the St. Lawrence River as it intersects with the St. Charles River heading towards the Atlantic. As a major centre for French culture, the city is brimming with many museums in-
cluding the Musée de la civilisation, and the Centre d’Interpretation Place-Royale, a historic museum featuring a dressup costume room. The Fine Arts Museum showcases the largest collection of Québec art in Canada. The Québec Winter Carnival has taken place every February since 1954 with a full roster of activities for young and old. For a ski honeymoon, Mont Sainte Anne and Stoneham ski centres are a short drive away. Romantic, fully appointed accommodations are plentiful, from the famed Chateau Frontenac with a view over the river basin, to familiar chain hotels and unique bed-and-breakfast choices. Organizing is key to packing for a simchah

acking for a short winter getaway requires a lot of organizing. The seasoned traveller is not afraid to wear clothes more than once, knows that black capris or dress pants are perfectly suited to go from day to night, and an equally versatile black peep-toe shoe can do the same. As a fallback for an extended trip of two or three weeks, there is the neighbourhood laundromat or hotel cleaning service. Many laundromats provide wash and fold services so you can head back to the pool and leave your clothes for a reasonable charge. When travelling for a simchah, packing is a different story. There are many events and a number of required outfits, from casual to evening wear, as well as relaxed attire for the traditional Sunday brunch. It’s important to be methodical and organized – suits, dresses, matching shoes and fashion boots for Friday night or Saturday morning services, and formal attire for the main event. Packing for an outof-town simchah requires list upon list. While there are surely many retail stores at your destination to pick up an errant pair of socks or underwear, finding the right pair of boots, new outfit or a man’s suit is stressful. The collection of simchah clothes should be colour co-ordinated, and shoes and boots should be shined. A variety of men’s ties are rolled alongside various coloured belts and boxed dress shirts. One last-minute detail on the list are those plastic collar darts that consistently fall out of every man’s dress shirts. Relaxation comes after all the festivities and you switch to vacation mode for a further few days, especially if your destination has taken you out of the sleet and snow. Sunny destinations can be cold and rainy in the winter months so windbreakers, sweatshirts, T-shirts, shorts and jeans
can all be worn in one day. Layering is key. Make sure your luggage is not overweight. Escalating fuel prices have required airline staff to become diligent in their efforts to stop people from overstuffing their bags. Time to update the old clunky luggage to the newer, lighter luggage options. Airline employees are strategically placed in the line to weigh passengers’ luggage before they reach the counter. Many harried travellers can be seen rushing back from the various airport vendors with new luggage to transfer their items and repack their overstuffed luggage. Delayed or lost baggage is a frequent occurrence. Sometimes luggage is left behind or simply not loaded on time. Some baggage is not correctly tagged by overworked ticketing agents, or baggage handlers may erroneously load your bags onto the wrong conveyor belt. Computerized check-in makes tracing bags easier than in the past. Notify airline counter staff immediately. Your contact information will be recorded including your hotel information. Most airlines have a central baggage office to call for followup. Air Canada states that most baggage will be found and delivered within five days but there is paperwork involved to trace the bag in question. Many major credit cards will cover certain necessary expenses for toiletries and other essentials including basic clothing items as part of their services to their customers. It is imperative to contact your credit card company if your luggage has not been retrieved after six hours. A claim file will be initiated. Keep all receipts to forward to the credit card company upon your return. A fail-safe fallback is to place simchah essentials into a carry-on bag. No room for the party shoes? Leave your purse at home in favour of a stylish backpack as your second piece of permitted cabin luggage. n

In honour of weather which makes us want to stay in rather than brave the elements and go out why not devote the month of February to honouring what really makes the world go round…love. Since the secret of enduring love is keeping it whimsical and filled with wonder, and the way to a man’s (or a woman’s) heart is indeed through their stomachs, we’ve designed a romantic evening built around cooking a sensual, sensational meal together. Fesenjan (Iranian duck with walnuts and pomegranate syrup) o 4 duck breasts, skin and bones left in o 2 tbsp. vegetable oil, more if needed o 1 onion, sliced thin o 3 garlic cloves, chopped o 1/2 cup walnuts, finely chopped o 3 tbsp. pomegranate syrup o 1/2 cup water o salt and pepper to taste o 2 tsp. sugar or to taste o 1/4 tsp. saffron melted in 1 tbsp. hot water o 1 tbsp. lime juice o pomegranate seeds for garnish With a small, sharp knife, score duck skin. Heat oil in a large heavy pan until very hot. Place duck breasts in pan, skin side down. Sear quickly until skin is dark golden brown. Turn duck breasts over; lower heat and add onions and garlic. When flesh is lightly coloured, turn duck again. Remove from pan when it is still underdone, along with most of the drippings. In a small amount of drippings con-

tinue sautéing onion and garlic. (If you don’t want to sauté in drippings, use vegetable oil) Add walnuts; cook until they begin to darken and give off a lovely nutty aroma. Add pomegranate syrup, water, salt and pepper; stir to combine. Add sugar to taste and return duck breasts to the pan. Simmer gently in the sauce until they are medium rare. Take pan off the fire; add saffron and lime juice. Sprinkle pomegranate seeds into sauce and over duck. Serve with saffron rice. Adapted from a recipe by Chef Zipora Einav and The Book of Jewish Food by Claudia Roden. Pomegranate syrup is available in Middle Eastern stores. Makes 4 servings, which is good as it tastes fabulous the next day.

o 12 plump asparagus spears, peeled, with ends trimmed
o 1 tbsp. olive oil
kosher salt and freshly ground white pepper to taste
Preheat oven to 475. Place asparagus in shallow pan in a single layer. Drizzle with olive oil. Season with salt and pepper. Bake about 6 to 8 minutes, until tender but still firm. Makes 2 servings.
This is the perfect ending for a romantic dinner because it takes just minutes to prepare. Start it after you have finished your main course and serve it warm. o 4 large egg yolks o 1/4 cup superfine sugar o 1/4 cup Marsala, Moscato d’Asti, port or rum o 1 tsp. freshly squeezed lemon juice o pinch of cinnamon o 2 tsp. ground almonds o 2 strawberries, for garnish Create a double boiler with a bowl fitted into a saucepan. Add water to the saucepan, and, over medium heat, bring to a gentle boil. Place egg yolks and sugar in the bowl and, with a balloon-shaped whisk, beat them together. Slowly whip in the wine and lemon juice and continue whisking at a steady, moderate pace until zabaione is frothy and thick. Continue whisking until zabaione falls from the whisk and mounds on top of itself, about 4 minutes. Remove bowl from saucepan and whisk for a few more seconds. Place in 2 sherbet glasses. Sprinkle with cinnamon, ground almonds and top with strawberries. Serve immediately. Makes 2 generous servings. n

Referred to as roscas in Spanish-speaking regions and roschette in Italy, Saltsman says the bagelah are sought out in Jewish bakeries around the world. Toasted Israeli couscous in winter squash cases is a decorative, versatile entree for pareve, meat or vegetarian diners. As for her apricot preserves, Saltsman takes readers back to the years she lived in a house with a Blenheim apricot tree in the backyard. That is when her safta introduced her to homemade apricot preserves. While few people have the luxury of an apricot tree on their property, many consumers find this delicious fruit is accessible. Furthermore, these preserves sweeten the taste of plain cake, toast, and crackers; therefore serve as a handy spread. “Choose fruits that have a velvety, yellow-orange skin, a little give, and a hint of a sweet aroma,” the author advises. Saltsman introduces her recipe for “Kitchri: red lentils and rice with golden garlic puree” with a reference to the red lentil stew Jacob served to Esau to seduce him into selling his birthright. According to the author, every Iraqi Jewish family has a version of this vegetarian comfort food. Saltsman then proceeds to provide her own. Her dairy recipe yields six servings. “Apples in Nightgowns” is the catchy name Saltsman reserves for a dairy recipe

n a recent trip to the local library, this bibliophile moved a huge book left in the reading cubicle to make room for other reading material. After taking a minute to browse through it, I couldn’t put it down and ended up devouring the entire book. The 2015 publication serves as a great gift or welcome culinary addition to a newlywed’s repertoire. The Seasonal Jewish Kitchen by Amelia Saltsman (Sterling Publishing) offers a fresh take on tradition. ith the wedding season on the horizon, several major bridal shows are setting up to showcase their products and services making it easy for the bride and groom to explore their options. Larger markets across Canada hold several major shows each year. Smaller centres are also jumping on the bridal expo circuit to promote local suppliers. Montreal hosts many different bridal shows with wide appeal including the newest addition, The Events Show, specifically geared for the Jewish community. Should the bride and groom take the time to attend? While taking in a wedding show can be overwhelming, the convenience of one-stop shopping makes attending a show worthwhile. Often held in a large event space such as a hotel ballroom or convention centre, numerous booths are set up for suppliers to showcase their products and services. “Bridal shows can be very helpful for researching all the vendors you need for your event,” says Angela Lehrer of Mont-
real-based Wild Cherry Events. “Even if you already know who you will be using, it’s helpful to see the displays that each vendor brings to the show. They put a lot of effort into making their space stand out, and use very creative ideas to do so. You can get some really unique and new ideas for décor and the latest trends for your own event.” Pre-planning is a must. Start with perusing the list of vendors (available on line) and plan out which suppliers it would be important to see. Shaun Gray, a wedding planner, writes in the Huffington Post about the importance of mapping out the day and prioritizing your needs. He emphasizes that sticking to a strict vendor list makes the show more enjoyable and less taxing. Although it may be difficult to stick to the list given the many distractions, the bride will be able to get a feeling about the products and services each supplier provides. “If you can’t have a meaningful conversation, or you don’t click with the vendor, then move on,” says Stephanie Fagen, wedding planner at Wild Cherry Events. “The vendors are there to impart information on their services and what they

Something old, something new Marilyn Lazar Special to The CJN
W
hat would it be like to be married in Europe’s oldest active synagogue, Prague’s Altneuschul? This might sound like a hypothetical question along the way to more practical planning. But for Tania and Jonathan Center, it was a vision which they transformed into reality. The Altneuschul, in the capital of the Czech Republic, dates back to 1270. Alteneu translates literally to “Old new”, referring to stages of construction. But the concept of “Old new” suits this true story. Tania and Jonathan are a very contemporary couple who were married in Prague, the very city where Jonathan’s maternal grandparents were married long ago. Their fascination with family history was ignited on a trip to South Africa where Tania was born. There, they visited the Germeston synagogue, where Tania’s great-grandfather had been involved. Meanwhile, Jonathan’s parents invited them on a family trip to Europe. In particular, they wanted to show their kids
the Czech Republic. When it was booked, Tania and Jonathan were not yet engaged, although Jonathan’s father made no secret of his preference to take Tania on this trip as family. In a burst of inspiration one day, Tania said, “Aren’t there old synagogues in Prague? Let’s get married there!” Now they had a mission but not a method. Jonathan remembered the Altneuschul from his March of the Living experience and felt a strong affinity to the Czech Republic, where his mother was born to his Holocaust survivor grandparents. They called the shul and obtained the rabbi’s home number. There were many calls but not much progress. Finally, they got to the assistant rabbi who was from Israel and spoke English as well. The couple obtained a confirmation letter from a local rabbi to confirm that they are Jewish. In the process, they developed a nice relationship with the Chabad here, where they took pre-marriage lessons. They managed to make all nuptial and travel arrangements and set the wedding date for July 29. Once in Prague, the experience took on a surreal quality. Much happened on the

eve of the marriage. They all met the rabbi, and Tania attended the mikvah. They found a limo driver, asked him to show up at the appointed hour and tore a fifty dollar bill in half, giving him one part as an incentive to show up. Israeli tourists heard the singing and asked the bride for a blessing, which she gave, as is customary. The day was happy and giddy – not stressful at all. The wedding dress was a skirt and top, with a fitted jacket for under the chupah. Tania carried a simple bouquet of red roses. The bedecken took place in the very old women’s area of the Altneuschul. Jonathan’s zaide’s talit comprised the hand-held chupah. There were refreshments in the synagogue and a reception in the Jewish

Can bridal fashionista turn Israel into the dress-up nation? ginning, her business has been closely held, with family members helping out. Her daughter is one of her models. Less than a decade later, in 2004, Balilti expanded – moving her operation into a larger space, turning her boutique into a full-fledged fashion house, and taking on the name Berta Bridal. “We had reached a point in which I felt like the place became too small for my needs, in terms of production and the level of service I expect my team to grant my brides,” Balilti told JNS.org. “Then we decided to move to our new place.” By 2005, the company had 15 retailers, and a year later more than 30 stores were carrying the Israeli-made gowns. A few years later in 2012, when her son-in-law

t’s already known as the “start-up nation.” But can bridal fashionista Berta Balilti turn Israel into the dress-up nation? Balilti, owner of Berta Bridal, presides over an internationally successful business, creating luxurious and glamorous wedding gowns sold worldwide. From her fashion house in the southern Israeli port city of Ashdod, she exports gorgeously detailed gowns to boutiques and stores in more than 20 countries. This isn’t your mother’s wedding dress. Balilti is known for her shapely modern designs with signature daring bare backs, dramatic trains, and intricate lace and tulle. She has certainly found her place in the multi-billion dollar wedding industry – $60 billion a year in the United States alone. And with the worldwide appeal of her designs, Balilti’s spot as a high-end wedding gown designer has helped place Israel at the top of bridal haute couture fashion. “There’s nothing like Berta’s dresses,” said Renata Kukielka, the buyer for L’Fay Bridal in New York City. “She has brought
something unique to this market, classic and sexy designs. Brides try her dresses on and most are in disbelief, they feel so gorgeous they don’t want to take them off.” Balilti’s success may have seemed unimaginable just a generation ago. Born in Cairo, Egypt, she emigrated at age three with her parents to Israel just prior to 1967’s Six Day War, which had devastating consequences for Egyptian Jews. Years earlier, some of her family migrated to Paris with the help of the Jewish organization HIAS before coming to America. Growing up in Israel, Balilti found her flair for fashion and dreamed of designing the ultimate dress for a woman’s most important day. After graduating from Ramat Gan’s Shenkar College of Engineering and Design, she worked during the day as a seamstress, and later, as a junior designer at a ready-to-wear company in Tel Aviv. At night, she sketched and sewed wedding gowns at home, determined to make her dream come true. In 1995, she opened her first bridal salon, La Belle, a small shop where she was the sole designer and had a staff of about 25 people working for her. From the be-
Nir Moscovich joined the team, he took the company international, overseeing its global operations. “Everything happened really fast in the international scene,” she said. “We were constantly getting inquiries from brides and many retailers all over the world who wanted to carry my line.” Today, her gowns are sold at more than 60 retailers in close to two dozen countries, including in the U.S. department store giants Saks Fifth Avenue and Nordstrom. Though she has made her dream come true, Balilti isn’t complacent. “I still chase my dreams,” she said. “I’m grateful for all I have achieved so far, but there’s much more ahead, and I have no plans of taking a break.” n

oon after a couple announces their engagement, their families and friends host receptions, dinners and showers to honour the occasion. When the couple settles down after the wedding, they plan to reciprocate. While some throw an elaborate cocktail party, others prefer to invite a few guests at a time for brunch, and socialize in a relaxed milieu. Regardless of option, hosts derive pleasure treating company to tasty delicacies. Sweet and Tart and Cookies & Cocktails are two recent hardcover books that are chock full of innovative recipes that fit the bill. Distributed by Raincoast Books in Canada, the stunning presentations and colourful illustrations appeal to the senses. Sweet and Tart by Carla Snyder with photographs by Nicole Franzen includes an array of recipes enhanced with citrus, whereas Cookies & Cocktails is a compendium of “recipes for good times”. Both books include comprehensive, albeit, easy-to-follow directions. As Snyder notes in her introduction, “Sweet and Tart is a book for bakers of every level, but with the understanding that work and family schedules are busier than ever.” The author informs how many minutes each recipe takes to prepare and the equipment needed. It’s also comforting to know, there is no need to fetch numerous newfangled devices. However, she does recommend some cool gadgets that ensure perfection and ease of preparation. A case in point is the microplane zester. The author notes, “It’s the best tool you will ever buy. It effortlessly takes just the peel from a citrus fruit and not the bitter white pith that lies underneath.” As for ingredients, she advocates using large eggs to get the best results and kosher salt rather than regular iodized table salt. The latter are just a few of the author’s helpful suggestions. No doubt, even experienced cooks are bound to pick up tips but Snyder’s advice is particularly timely for novices. Among the chapter listings are bars and cookies, pastries, cobblers, tarts, pies, cakes, chilled and frozen desserts, muffins, scones, breakfast breads and savouries. The key ingredient in each of the 70 entries is citrus, mainly lemon, but also orange, grapefruit and lime. Cookies & Cocktails lists more than 60 recipes, such as cookies and confectionery that can serve as gifts as well as delectable cocktail concoctions. The illustrations prove helpful for presentation purposes. Among the catchy cocktail selections is The Big O. The mixture takes a jiffy to prepare and the visual effect is dazzling. A recipe for one consists of four or five fresh raspberries, two ounces of premium vodka, and one or two ounces chilled champagne. Muddle the berries until they are mashed to a purée, and transfer to a small, shallow bowl. Dip the rim of a chilled cocktail glass into the purée. Add the vodka without disturbing the prepared rim.
