• 1 small sweet potato, peeled & cubed • 1½ cups 7-grain blend • 2 cups milk • 1 tablespoon chia seeds • 1/2 teaspoon salt • 1½ teaspoons cinnamon, divided • 1 teaspoon pure vanilla extract • 1/4 teaspoon nutmeg • 2 large ripe bananas, peeled & sliced • 1/2 cup nuts, toasted & chopped (almonds, walnuts, pecans...) • 2 tablespoons melted butter • 2 tablespoons flour • 2 tablespoons maple syrup

It’s hard to imagine a recipe that includes more goodfor-you ingredients that this easy-to-prepare breakfast. Heart healthy, cholesterol lowering whole grains. Fiber rich, beta-carotene packed sweet potatoes. Chia seeds, loaded with antioxidants and Omega-3 fatty acids. Plus nuts – recent studies tie eating nuts to longer life spans – and blood sugar lowering cinnamon. Best of all, this delicious breakfast bake is like starting your day with dessert.
1. Preheat oven to 350º. Generously butter an 8” square baking dish. 2. Place sweet potato in a medium saucepan, cover with water and bring to a boil. Reduce heat and simmer for a few minutes, until cubes are soft. Drain and set aside. 3. Return the saucepan to the stove and add the milk, chia seeds, salt, one teaspoon of the cinnamon, vanilla and nutmeg. Bring almost to a boil then reduce heat to low and add 7-grain blend. Simmer, stirring frequently, until the grains soften, about five minutes. Remove saucepan from heat. 4. In a small bowl, combine the nuts, butter, flour, remaining cinnamon and maple syrup. Stir until the nuts are evenly coated. Set aside. 5. Gently combine banana slices and sweet potato chunks. Pour into the baking dish and spread evenly. 6. Pour the 7-grain blend over the bananas and sweet potatoes, then top with nut mixture. 7. Bake on center rack of the oven for 25 to 30 minutes, until nutty topping is toasty brown. Serve warm, as is or topped with a drizzle of half ‘n half or maple syrup.
