1. ABOUT THE SOFTWARE

 

Designed to support chefs throughout their careers, CulinarE-Companion™ Recipe Management Software accompanies Professional Cooking, by Wayne Gisslen; Professional Baking, by Wayne Gisslen, and Professional Garde Manger, by Lou Sackett, Jaclyn Pestka, and Contributing Author Wayne Gisslen.   CulinarE-Companion™ includes all of the recipes from the textbook you are using plus bonus recipes, audio pronunciations, illustrated procedures, and technique videos, as well as the ability to create shopping lists, resize recipes, perform metric conversions, and analyze the nutritional content of ingredients and recipes. You may even add your own recipes, photos, and videos, and create your own cookbooks.  

  2. SYSTEM REQUIREMENTS

 

Minimum configuration:   • PowerPC G5   • 1024 MB RAM   • 1 GB free hard disk space   • Mac OS X, version 10.5   • Safari 3 or Firefox 3  

  Preferred configuration:   • Intel-based Mac   • 2048 MB RAM or higher   • 1 GB free hard disk space   • Mac OS X, version 10.6, 10.7   • Safari 4 or 5 or Firefox 7  

  This program contains files in both Flash and PDF format. If you do not have a PDF reader or a Flash player installed on your computer, you may download the latest readers and players for free at www.adobe.com/downloads.  

 

3. INSTALLING AND RUNNING THE PROGRAM

 

3.1. Previously Installed Versions of CulinarE-Companion™ (CEC)   Note that CEC 4.3 is a significant update of features in CulinarE-Companion™ and may need you to backup your personal files from previously installed versions of other CEC. It is a useful safety precaution to back up your files anyway for any version before updating, in case anything occurs during installation that may make your files unavailable later. However, please check the notes that follow to see if you need to do so for your installed version. Under normal circumstances, previously installed versions in the 4.x series will update automatically.   CEC 3.0 for Professional Baking, 5th edition installed:   If you have already installed CEC 3.0 for Professional Baking, 5th edition and you have added your own assets (recipes, ingredients, shopping lists, etc.) to this version, all of your assets will appear in CEC 4.3 by doing the following:   1. Save all your recipes by selecting them and clicking on the export button and creating an export file.   2. Uninstall CEC 3.0 completely.   3. Click the "Download CulinarE-Companion™ for Mac" link and install the CEC 4.3 CulinarECompanion™ Software.   4. Run CEC 4.3 for the first time and you will see the Professional Baking, 5e textbook in 4.3 format and all your assets appear in the CEC 4.3 software.   5. Next, click the "Download Professional Baking, 6th edition in 4.3 format for Mac" button to install the Professional Baking, 6th edition textbook in the 4.3 format.   6. Run CEC 4.3 again and you will see the Professional Baking, 6e textbook listed under the cookbook listings in the CEC 4.3 software.   CEC 3.0 for Professional Cooking, 6th edition and Professional Baking, 5th edition both installed:   If you already had CEC 2.0 for Professional Cooking, 6th edition installed and then you upgraded it with CEC 3.0 for Professional Baking, 5th edition, then all of your own assets (recipes, ingredients, shopping lists, etc.) are already in the CEC 3.0 version. You should then proceed with the steps described above for CEC 3.0 for Professional Baking, 5th edition.  

CEC 2.0 for Professional Cooking, 6th edition installed:   If you already have CEC 2.0 for Professional Cooking, 6 th edition installed and you have added your own assets (recipes, ingredients, shopping lists, etc.) to this version, please remember that your assets will not automatically import from CEC 2.0 to CEC 4.3. You can do the following:   1. Save all your recipes in CEC 2.0 by exporting them to a file format (pdf, xls, txt).   2. Uninstall CEC 2.0 completely   3. Download and install the CEC 4.3, CulinarE-Companion™ Software.   4. Run the application and create your assets in CEC4.3 manually again.   If you have any previous versions of CulinarE-Companion™ already installed on your computer and you have any questions or issues, please refer to http://wiley.custhelp.com/app/ and type in "CulinarECompanion" for additional assistance.   If you cannot find the answer to your question in the Help section, please contact us by phone or through online support.   3.2. Installing the program   • Make sure that you have enough free disk space available on the drive where you want to install the application.   Step 1: Download and install the CulinarE-Companion™ 4.3 application before installing any of the book products.   • Click the Download CulinarE-Companion™ for Mac link and download the CEC 4.3 CulinarECompanion™ Software.   • Extract the downloaded zip-file (setupWileyCulinarE-Companion_4.3.zip).   • Run the "SetupCulinarEC_MacOS.pkg" file in the downloaded software folder. Follow the on-screen instructions.   Step 2: Download and install the media files (Professional Baking, 6th edition; Professional Cooking, 7th edition; Professional Garde Manger.   • Download the setup file for book you have purchased to your computer in any folder and then extract and install it by double-clicking. Follow the on-screen instructions.   • Double-click the Wiley CulinarE-Companion 4 icon that is located in the Wiley CulinarE-Companion 4 folder and launch the application which will also download and install the media files. Media files are more

than 100 MB and may take some time to download. Installation of media occurs only on the first time you launch the application.  

  3.3. Installation options   Follow the on-screen instructions to install the CulinarE-Companion™ application. You will be provided with various options. The following list explains your installation options in each of the installer screens.  

  Introduction Screen   This screen is for informational purposes, you cannot select any options.  

  Software License Agreement   Please read the license agreement carefully. To continue installing the software, you must agree to the terms of the Software License Agreement. Press "Continue" and "Agree" to continue or press "Disagree" to cancel the installation. Also you can print the license agreement.  

  Select a Destination   Select a destination volume to install the CulinarE-Companion™.  

  Pre-installation summary   You can begin the installation, review and change any of your installation settings or exit the wizard.  

  Copying Media   This screen displays information about the progress of the installation. This may take several minutes.  

  Download and Install Media   This screen displays information about the progress of the installation of the images and other media files. This may take some time.  

  3.4. Running the program   To start the program, double-click Wiley CulinarE-Companion™ 4 icon that is located in the Wiley CulinarE-Companion™ 4 folder on your hard drive.  

  NOTE: You can choose your preferred browser to use the application. To select a browser (when the program starts and the splash screen appears), click "  Wiley CulinarE-Companion™ 4" -> "Preferences..." -> "Browser" on the top command bar. If Safari is the only browser available on your system this option is disabled.  

3.5. Uninstalling the program   Before uninstalling the program you should save all your recipes in the Export file.   Run the Uninstaller.app in the Wiley CulinarE-Companion™ 4 folder on your hard drive. Select the “Remove data” checkbox during program uninstalling if you want to delete all you saved (see Data Storage and Restoration).  

  4. PROGRAM FEATURES

 

Refer to the Help section within the application for detailed instructions on using the program.  

  4.1. Home page   From the HOME page, you may link directly to any of the Cookbooks (including cookbooks you create), Recently Viewed Recipes, or Technique Videos. A Search recipes and Advanced Search function is also available, allowing you to easily search recipes by name, related key word, or even the primary cooking method or cuisine.  

  4.2. Recipes   Clicking on the RECIPES tab brings you to the "heart" of the CulinarE-Companion™ application. From this page, you may choose to view recipes, access the nutritional analysis of an ingredient in the Ingredient List, Create a New Recipe, Attach an Existing Recipe, or Add a Cookbook.  

  4.3. Shopping List   The SHOPPING LIST function allows you to easily create shopping lists automatically from recipe ingredients. You can even easily generate a shopping list automatically from multiple recipes.  

  4.4. Skills   The SKILLS tab includes a Skills Library, a Procedures Library and a Technique Video Library. The Skills Library presents a collection of key procedures, recipes, and technique videos organized in a manner that illustrates and reinforces core cooking techniques. The Procedures Library is an alphabetical listing of the key procedures referenced in the recipes, as well as bonus procedures highlighting fundamental techniques required to execute the recipes. The Technique Video Library is an alphabetical listing of all of the video clips stored in your CulinarE-Companion™ application.  

 

4.5. Tools   The TOOLS tab includes useful reference tables, such as Metric Conversion Factors and Approximate Weight-Volume Equivalents for Dry Foods.  

  4.6. Glossary   CulinarE-Companion's™ Glossary contains over 1,800 culinary terms, with audio pronunciations for over 700 foreign terms.  

  4.7. My Files   MY FILES is where all of your personal recipes, photos, videos, and other documents that you attach to the program are organized for easy access. You can classify them so they are easy to find for future reference. You also can easily replace and update files as your skills progress.  

  4.8. Preferences   The Preferences link is located at the upper right hand corner of every page. There you may choose to display recipes in US and/or metric values, add and delete your cookbooks or change their order.  

  4.9. Data Storage and Restoration   All data information is copied and saved to the computer hard drive in the sub-folder initially created during installation.   When first running the application all data is automatically saved to the user's Home folder of the operating system. This data remains on the user’s hard drive even after uninstalling the application. Upon reinstallation, this remnant data is automatically integrated into the application database. Choose the “Remove data” option during program uninstalling if you wish to remove these data.   Note if two or more users are owners of the same machine they will have their own databases in their user Home directories. There is no need to re-install the application for multiple users.  

  5. TROUBLESHOOTING AND OTHER RECOMMENDATIONS

 

The CulinarE-Companion™ application operates as a mini web server on your computer. This is very efficient and flexible but may require some adjustments to your browser settings if you have problems at any time. It is unlikely you will have problems unless you have altered settings on your browser, but the following notes explain the main points where a problem may arise.  

  5.1. Bypass proxy settings   If you use a local network with proxy server, you should go to the System Preferences -> Network -> choose one of your internet connection, for example "Build-in Ethernet" -> Proxies tab -> Configure Proxies Manually -> add "127.0.0.1" into "Bypass proxy settings for these Hosts & Domains" text box.  

  5.2. Disable your pop-up blocker   If you have a pop-up blocker installed in your web browser, it may interfere with the functioning of the CulinarE-Companion™ application, which does use pop-ups. Please disable your pop-up blocker while you are using this software.  

  5.3. Browser's security level   Some pages may trigger an error message if the security settings of your internet browser are set to HIGH. It is recommended to set the security level to MEDIUM while running the program. You can also identify this program as a safe product for security as follows - for Internet Explorer:   1. Go to the Explorer -> Preferences... -> Web Browser -> Security Zones.   2. Select "Trusted sites zone".   3. Click "Add Sites...".   4. Uncheck "Require server verification (https:) for all sites in this zone".   5. Click "Add..."   6. Type "localhost" in the "Add this website to the zone" field and press the "OK" button.   7. Set the security level for this zone as "Low (least)".   8. Click "OK".   5.4. Switching between browsers   If both Safari and Firefox are installed on your system, it is possible to switch the program to use the one of your choice. To choose a browser:   1. Run the application.   2. Click " Wiley CulinarE-Companion™ 4" -> "Preferences..." on the top command bar.   3. Click the "Browser" tab.   4. Select your preferred browser from the drop-down menu and click "Close".   If Safari is the only browser available on your system this option is disabled.  

5.5. Procedure PDFs are not loaded in Safari 4   If you clicked ‘Procedures’ links in Skills -> Skills Library and the file did not load in the frame as expected, please try to do that:   1. Applications -> Adobe Reader 8 -> Adobe Reader -> Preferences -> Categories: Internet   2. Clear the checkbox “Display PDF in browser using: ...”   3. Click "OK".   5.6. Export of Recipes as a Zip-file in Safari   Before Export of Recipes as a Zip-file in Safari, please do the following:   1. Safari -> Preferences... -> General tab   2. Clear the checkbox “Open "safe" files after downloading”.   5.7. More than one instance of the Safari 5.1 browser   If the program opens more than one instance of the Safari 5.1 browser (for example, one browser with a previous screen displaying and one browser with the current program running), you can correct this by making the following changes in your preferences:   1. Safari -> Preferences... -> General tab   New windows open with: Empty Page   New tabs open with: Empty Page   Homepage: (empty)   2. Safari -> Empty Cache...   5.8. Two browser windows open up in Macintosh 10.7 with Safari 5.1.1 when launching CulinarECompanion™   When you are using Macintosh 10.7 with Safari 5.1.1, if CulinarE-Companion™ opens two instances of the browser, go to System Preferences -> General, and make sure the option "Restore windows when quitting and re-opening apps" is checked. When you relaunch the program, only a single Safari browser window will open.
